I think either “You have to do the work” or “You have got to do the work”, with “gotta” simply being a contraction of the latter and clearly much more informal. I think in a proper document, paper, speech, etc it shouldn’t be used at all but when you’re trying to talk to everyone without sounding elitist then his choice helps with tone.
