I bought a hot air popper this week. So far I like olive oil and salt. I tried shredded Parmesan cheese today, but it didn’t adhere to the popcorn, it just fell through to the bottom of the bowl.

Lazy! Honey was home, we went shopping to stoke up the freezer n frig . . . she hit the track and I been woodshedding my dobro work off and on, between a cold beer n foodie stuff.
Picked some basil, messed with plants, tossed one mater cuz it got red spider mites and died fast . . .

It’s cooler. The monsoons are setting up right on time. I got a tiny amount of rain today. The temperature has dropped around 10 degrees from a few days back. Makes it a lot easier to function.
My new KVM switch arrived yesterday (only a week getting here from Durango). Somebody along the line had changed my street address from what I had given them, then they refused to deliver saying the (changed) address was invalid.
The new KVM fixes my resetting keyboard issue, so my systems are now functioning flawlessly.
Also, I don’t know if there’s a format for this, but I did just join FDL a few minutes ago — not as a congrats, but as an apology. I’ve been participating/lurking on FDL for almost four years, helping as I could on a post-doc’s salary. When this news came out this week about the White House and SS benefits, I realized that FDL was about the only site I visited that made sense any more — and I have a graduate policy degree from William & Mary. Thanks to Jane et al. for all their work, and I’m sorry that it’s taken so long to be able to formally support as a member what you all do.

As Jimmy Buffet said in song, “There’s a fine line between Saturday night and Sunday morning.” The same applies at FDL, in my experience (and in the best possible sense).

Cream cheese, roasted garlic, some herbs, homemade spread.
Goes REAL well in homemade salad dressings (I use the blender).
By itself on warmed slices of artisan nutty breads.
Warm up some brie n mix the roasted garlic with the brie (add herbs).
Add it to winter time fondue, with port wine . . . mmmmmmmm . . .

Well, as you know, the shuttle went off and since I decided only a 30 percent chance of a go wasn’t worth the hassle, we didn’t go to the cape to see it. It was too cloudy to see it from here.
As I stepped off the front porch to walk to the street to, hopefully, watch the shuttle, I ran into a black snake, which didn’t make me too happy.
A few minutes later, while sitting on the side porch (I have a plethora of porches)a garden snake scared the shit out of me. That made me wonder if my husband had passed and I was single again.
A few minutes ago a roach flew up the leg of my shorts. Not sure why I happened to cross paths with the only one energetic enough to fly.
The good news? I finally convinced the lizard, who was trying to take over my kitchen windowsill through eminent domain, to go back outside.

I’ve ordered club sandwiches all over the world. I recall once or twice finding a really, really good one. For some reason, one of my absolutely worthless goals in life, aside from shopping in every major city in the world, is to eat a club sandwich in every major city in the world.

Tucker, our Main Coon, loves the heat. Ron found him sleeping in the garage today. It was over 95 outside. I cannot imagine what the temp was in there. And he has a long coat. Sometimes I make him come inside. He thinks I am a stupid human when i do that.
You do control the weather it’s called the thermostat. Haven’t you noticed, rain is your fault, as is cold. When the cat has to be in full time, she makes sure I pay for it, which is why she has been up for adoption for 5 years.

My Main Coon (The Merlin)is the same way. All rooms either have ceiling fans, AC or both, except we keep off AC in The Daughter’s room unless she comes in from Philly for one of her short visits. That room can get pretty hot; yet that’s where we find him, near a corner closet, sleeping….

It would take too long to detail, but I been into chicken n sirloin paillard’s lately . . .
So I’m thinkin of a mesquite grilled paillard of some sort, seasoned or marinated of course.
Has to be cheese, for me it would have to be VERY flavorful, so something strong.
Sliced purple heirloom maters, thick enuff to grill on the mesquite.
A portabella has to figure in here, marinated too, n grilled.
Bermuda onion, perhaps a full one grilled n smoked on the mesquite. Then sliced to the sammich.
Some kind of salad green . . . this is wide open country. Belgium endive to arugula to heart of romaine . . . use leaf or knife shred it? I dunna, takes research. ;-)
For bread, has to be some whole wheat nut artisan thing, maybe scooped out both sides . . . toasted somehow, sprinkle EVOO n some balsamic on it.
I’m not fond of the bell pepper family on sammich’s, but I’ve done it. They’d hafta be smoked on the grill n peeled of course. Orange one’s, maybe a combo of red n yellow. No green, way to declasse anyore.
The kickers would be, hot peppers, marinated cukes, sweet pickles, n such.
Like I said, this would take a lot of research.

Now wait minute, there’s that combo thing that can REALLY light one’s rockets. There’s that PERFECT French Dip, for instance. That is arguably a necessary sandwich/soup combo.
I have served a prosciutto and pesto on an Italian loaf (thinly sliced) to dip in a hot Parmigiano cheese and red wine dip. Crazy purple and green looking but, uh, YUM.
They do it so their 2-legged persons overlook their day to day indiscretions.

The crouton is critical, as is the cheese.

Since I’m neither Greek or Lebanese, I take liberties.
I try to use lamb, but will go with pork if lamb isn’t on hand.
I also use feta, cause I love feta. And since I’m not Greek or Lebanese…
And I’ll stick in a combo of allspice, coriander, mint, nutmeg, etc., depending on my mood. And since I’m not Greek or Lebanese…
But the egg/lemon sauce is the bomb. I’m not gonna go look up the correct name this time of the night, but I know you know what I’m talking about.

Oh yeah, puff pastry and good cheese is most excellent. I’m finding there’s no healthy substitute for puff dough and there never will be one. :(

That’s exactly right. Phyllo won’t puff, by design. You need a buttery-er dough, with more layers to puff up, and at a higher temperature too, btw.

It’s that crazy white sauce that goes into a specific soup, avgelomeno, but if you temper it in less a volume than SOUP, it’s a great sauce as thick as you make it.

Fillings I do need help with. Canned cherries just don’t cut it.
For decades (did I just say that) I’ve refused to bake because if it ain’t in the house, I can’t eat it. But as I approach 50 and realize I can now kinda, barely kinda, indulge since I went without for so long, I’m looking into sweets. And I love turnovers, even though they aren’t sexy.
I know white sauce as beschamel . . I need to go google that one.

I don’t know how to make a god dam pie.
I’m assuming key lime doesn’t count.
Never did like the light pastry type of deserts. I always was attracted to the heavy cheese cake or the black forest cake. My years in the kitchens was always about the soups and sauces. To this day i make up stuff that blows people away.
No no, this is different. Do you know a kind of Greek lasagna called “pastitsio”?
What one does is to make that avgelomeno soup very thick, like only 1 cup of stock, and THAT is the sauce that goes in that pastitsio, as well as the nutmeg bit. Very tasty.
Key lime is a hard pie to make. However, it sounds like pie doesn’t float your boat! :)
Well, cherries fresh are a pain to pit. N filling with pits is da pits!
So:
1 can pitted cherries, drained, reserve the liquid for reduction.
Zest of one orange, 1/2 of lemon zest.
1/2 cup triple sec (or Cointreu if ya have money to burn)
1/2 half cup brandy (cheap or expensive depending on budget)
1/2 cup white sugar.
Combine liquids and zests, reduce by half, add cherries and reduce till thickened.
Reduction can start out hot, but when ya add cherries has to be slowed up. Gotta keep an eye on it as it thickens. At some point, it’s filling thickened . . .

Very cool. When I processed our meat chix this time I set aside meat for sausage making. Another cooking learning curve coming up.
Ya know it comes down to the limes.
When i was a kid i helped my mom make the pies.(my other brothers never caught on to this trick) But after all these years i still know how to make a basic crust and roll it out. The filling i would have to work on as my mom was all boil the shit out of it and and a pound of sugar. Or open a can an dump it in. But in all it is not hard just a bit time consuming.
Devil’s in the details. I adore limes. For some reason we don’t get good key limes up here in N. Wa. Or good chestnuts in winter.
