Tonight is lovely in the northern Rockies. Cool, but not cold, and supposed to be gorgeous tomorrow. Survived the first week of classes and am looking forward to a long weekend. I think I will go hiking in the morning. I hope to get some fishing in as well, but they are talking rain Sunday and Monday. One of our grad students, who spent the summer in Alaska, brought me some Alaskan wild salmon today and I had some for dinner. Absolutely exquisite. I still have about 4 lbs. in the freezer.
Wow that is neat where in Italy my yoga studio is leaving this weekend for Hotel Borgo San Luigi. Tuscany to much money for me sounds pretty sweet. Yep we have had mostly June Gloom all summer…small tomatoes. Off of the coast weather pretty warm and sunny.

Yep. She gave me two fillets which I portioned out into 6 oz pieces. Pan seared one with a little mustard cream sauce, some rapinni, and a bulghar pilaf with blueberries and walnuts.

The hills of Florence were filled with happy cyclist and wonderful restuarants to pass away the evenings (I was om a summer study). Florentines were so incredibly cordial you are sure to have most excellent times. Congratulations.
I know! They were such little doods….early and tiny. But they have grown into themselves…..big boys! And so funny. 16 of us went to Italy….a mixed group…..two couples without kids, two families, two grannies, 5 kids (one of whom is autistic and was fabulous!), and a babysitter. I think no one got exactly the vacation they expected….but it was worth it. I’m easy. I loved it!

Oh, yeah!! I’m getting into natural salts, also. Worth the money. Natural is good, your body can shed what it doesn’t need while absorbing the minerals it does. Gray is better. Denatured 1950′s style salt is so bad, that’s in everything-bad. Creates an acid environment in your body chemistry and introduces man made molecules our bodies can’t process. Raises blood pressure and can promote diabetes.

Sorry, but salt is salt as far as the body is concerned and it treats them all the same. Natural salts have the advantage of containing other trace minerals that refined salt does not, but otherwise absolutely no health benefits.

True, but any of them are better than Mortons. Sea salts capture the peculiar chemical/mineral composition of the local waters where they are collected. I am afraid that when it comes to salt, my palate is not sophisticated enough to appreciate the finer distinctions.

well as with all sea salts you can get into the iodine and iodine free, but thats another story…
oh yeah — i use sea or kosher salt when cooking. the kosher is a bit finer and better suited for baking or when ya want easy absorption in the food. i hear there are finishing salts, similar to finishing oils in italian cooking. that’s where the palate really notices the diff.
I agree. I’m pretty sure Hains Iodized perfect granule sea salt is a crock. I’ a big fan of Celtic Gray. And I dabble in others when I think I deserve a perk, as cook. I like some of the smoked salts. We have a supermarket that’s in hot competition with Safeway so they introduced a Silk Roads spice section. I can get Indian Black Salt for samosas, all kinds of spices. It’s a great asset. So, my salt bill tripled this year. :>

I get mine at the local organic foods store and it is additive free, though the oceans do contain iodine as well. One of the things I like about sea salt, at least what I have tried, is that it is less “salty” than the more refined variety and has other flavor notes owing to the presence of other salts besides sodium chloride, as well as various other minerals.

I was listening to a piece on NPR today about the difficulty of mixing particles properly for drugs so that each pill has the correct amount of goodies. A scientist was saying that he responded to someone in Europe ( a candy maker) wanting to make sure that that the sugar could be distributed properly, and that that lead to breakthroughs on drugs.
I have read sea salt has less sodium than regular table salt but that sounds like bullshit to me.
Me likewise…some stores have a good variety…the only thing I have found with the salts is to definitely put several grains of whole grain rice in any container…less weeping of the salts…especially when it’s humid…

They timer just went off. I have 3 gorgeous 9 lb tom chickens chilling in ice water, each their own bath. Time to dry and wrap for aging. This is the part of the butchering process that NEEDS regulation. Meat meet ice water , soaking to cool core temperatures. If that bird isn’t clean, that water isn’t clean. And they do huge vats of birds.

Speaking as an anthropologist, there are a lot of nutrients (mostly proteins and fats) which are easier to get from animal sources than from plant sources. Because the animal versions are closer to the human ones than the plant versions, they are more easily digested and utilized. That said, you can more easily get a complete diet from exclusively plant sources than from exclusively animal sources. You do have to work at it, however, especially for the proteins.

Today I spent 10 hours writing a diary that not just seems obvious.
I was trying to be clever and draw parallels between the EPA saying the air is safe at ground zero and the FDA saying the gulf seafood is safe. Then I thought, “Who cares? The people who read this know this. The people I’m trying to convince to pay attention aren’t going to read this. I would be better off pushing the stories of the ‘real’ people challenging the FDA.

There is that as well and I am a committed omnivore. One of the reasons that animal foods taste so good, however, is that they are (in moderation) so good for you. Our bodies are primed by evolution to crave those things which are essential, but rare in nature. Sadly they are far too common today (fats, sugars, etc.) to our detriment.
Anything that gets any undo attention can be easily turned into some shiny object…too many to name!!!
The only time in my life that I’ve been overweight was when I was a vegetarian for about two years. I thought I was getting plenty of protein, guess I was missing something, though, because I couldn’t quell the appetite.
When I can’t figger out who or what the fuck died, it’s a hard day on the planet.

Protein deficiency is a common problem in vegetarian diets. You can compensate, but you have to work at it.

Doc…I would have no argument with your commitment to being an omnivore, but I sure hope that your eating habits revolve around wholesome products that are produced without hormones and antibiotics, and are grown with sustainability and good processing habits.
i like bto and turner is a good bassist. i always think of this when i think of bto — takes me back to when i was younger and doing that grind.
I eat what I can afford. The reality is that most people in America cannot afford to eat a very healthy diet. It is VERY expensive.
As you stated…I would add if you don’t look at the big picture with any kind of eating regime, you will eventually suffer the consequences…that goes for the omnivore diet as well…
Soy actually is a complete protein. The main essential amino acid that’s tough for vegetarians – Lysine is present in Soy.
Miso is a really fine way to get protein from soy. I suspect the micro-organisms responsible for fermentation improve the essential amino acid profile.

Doc…I certainly would not challenge the economics of affordable consumption, but saying people can’t eat a healthy diet in this country is not completely accurate in my opinion…it does require education on healthy choices and access to local foods…which is sometimes hard to achieve…
the expense of food is something we have to change and we will not do it by following the growing and production regime we have adhered to for far too long…it is a self-defeating system.
Meat and animal products are a natural part of the human diet. We are natural omnivores, but meat was not a large part of our natural diet (nor were sugars, fats, and refined starches). There are many things which we need and crave, but which we should consume in moderation. I eat meat, dairy, and eggs pretty much every day, but not in huge amounts. I also eat lots of vegetables and whole grains and fruits (mostly because I like them, but also because they are healthy). Balance and moderation are ultimately the key to a healthy diet.
Funny, after I gave up the vegetarian life (age 20), I went to eat a burger and stopped on the way home for a steak to bbq.
It was an instantaneous decision…just felt like I was starving!

The talk about eating meat was in response to openhope’s processing of some 9 pound cockerels she just slaughtered today.
She put each bird in its own ice bath. Very good processing practice.
Last time I processed home slaughtered chicken I did the chilling step in individual zip locks. Not quite the same – birds got washed with clean water after eviscerating and butchering, then put in zip locks in ice water. Better practice than commercial meat processors by a long shot.
Time to clean house!

I think it is an art form to eat vegetarian. It is work for a while but the vegetarian children shine with radiant health. Also think meat eaters live more stress filled life styles and are much more aggressive. It is a personal choice but I have to say my kitchen is made beautiful by the juice bottles filled with nuts, grains, seed, legumes, dried fruits, spices, vinegar sundry oils..flax, sunflower, safflower, coconut oil and kelp, Plus all the live veggies like tomatoes, parsely, lettuces, chard and on and on and on. So much to learn to enjoy and be grateful for. Don’t need to kill or catch and I can compete mentally and physically. Of course yoga and other exercise helps make it work. Still use dairy…goat kefir and yogurt and a lot of fruit. Cornacopia yes.
Many people, especially the poor, simply do not have reasonable access to healthy food. Even when it is available, many people cannot afford the prices for organic or free range meat on a regular basis (it is readily available here, but is $1-2 a pound more expensive than conventionally raised meat).
Much more involved than the process the last time I was involved in butchering animals (and I have helped butcher a wide array of wild and domestic animals).
Hey Doc, no argument with that statement…and you know when it comes to most things in life…different strokes for different folks…that’s cool. I also think that there are foods that have a particular memory attached to them and often create a sensual sensation when we eat them…that does not necessarily imply that they are healthy!
Often after eating a certain way or a particular dietary regime we get a tendency to do ‘binge’ eating…it seems a natural stimulus response from the former diet…that does not always equate with a direct need!

I ask my self what do I want to accomplish with the diary. How can I use what I write to change a mind or persuade another.
I want the media to change their mind set and assume the regulator agency is not doing it’s job. I want the media to acknowledge that the FDA are most likely being directed by commercial interests first not human health. And that instead of taking the FDA and NOAa’s word things are fine start listening to outside experts first and put them on the defensive. Also if human health is really in the balance with commerce let’s put the numbers on the table.
X people will get cancer because it will cost y dollar to do Z level testing.
We could do Z level testing but it would force us to shut down fishing for N months at a cost of XX dollars.
It is, as you say, a choice and I do not denigrate those who do not eat meat. I expect the same from them.

yup. There’s a reason that phrase is in latin – the idea is ancient. People like to eat what they like to eat and no sense trying to change it (outside of helping with deficiencies, etc – scurvy and rickets are bad news).

In temperate CA we have year round Farmer’s Markets. Nationwide one of the fastest growing food distributors still small percentage of supply. But our suppliers of grocery warehouse products increase “Shelf Life” with chemicals that are bio accumulative and grown with pesticides, fungicided, industrial fertilizer and other perservatives. Those are some good reasons to eat organically. The food chain in USA is polluted as is the soils it is grown on. That brings us to a watershed issue of polluting our groundwater.
Well. We’re omnivores. If I don’t get enough veges, I crave a salad and veges. Same thing!

You need to evaluate the amount of land needed to grow meat as compared to non meat for one. The impacts of ranching and farming are well documented. Some intersting dta now suggests that food processors like Vita Mix triple the nutritional value of foods and the way thing are stored and prepared can conserve. 6 billion people on the planet. How would one supply meat for all? Even water is short supply. As far as meat as a genetic necessity I question that.
I think whatever sustains people and makes them feel good in a balanced and natural way is a good thing. Vegan, omnivore, and every other regime. A good part of what happens with food is the attitude and gratitude that you have when you consume it. That can make the food transformational.
Most people feel good when a meal is shared with joy, when you are angry and upset, no food goes down well…it is all transformational.
That part about the genetic necessity of any one particular food type is a very old one, and is played out with data on both sides of the argument…but I do not think that an argument can be made about sustainability when it comes to livestock production versus grain and vegetable production. It takes less resources to grow and cultivate grains and vegetables…it is a proven fact!
When I walked through East Africa I noticed that meat was a tiny percentage of their diet. Some more than others. Meat can make a dominate culture. It can cause cancer and other diseases. The less people want the food I like the cheaper it will be. But all in all I have lost desire to buy meat or eat eggs I am happy to say. And I do get pangs for somethings feeling a deficiency but then so do omnivores.
Played with eggs a bit still have some in the frig but no real desire as the seem lifeless compared to say some home sprouted legumes or some green beans. Put some in a pizza dough not that good better without eggs. My taste is what I listen to.
I agree. I’m blown away with the portions I get in restaurants, though. One meal in a restaurant is 2-3 meals for me. So sad to see the size of the silverware, plates, etc.
Also I think the metabolism rate is a factor in processing foods. After a weight workout I am hungry not so much after aerobics, just had garlic buttee roasted toast followed by a slice of homemade pizza crust with avacado and then a half avi sand on bread. Rinsed my mung and lentil sprouts and headed for bed. Have a great weekend Loo Hoo and EDVE.

Good morning, pups. Today we’ve got Collins, Blow and Herbert. Ms. Collins addresses “The Ungreat Debate” and says this week in Arizona, there was continued talk from the governor about nonexistent beheadings. And there were 16 seconds of silence. Mr. Blow, in “Religious Outlier,” says according to a new Gallup poll, richer countries in general are less religious. But that doesn’t seem to be true of the United States. Mr. Herbert, in “Of janitors and Kings,” says janitors in a Los Angeles office that is part of the JPMorgan Chase empire lose their jobs but find their voices of protest.

The coffee and tea are ready, the cold drinks are in the fridge, and I’ve got corned beef hash and poached eggs to fuel me up for working in the garden. As an aside, I’ve got a blossom on an orchid plant I rescued from the “$2 death rack” at Lowe’s 2 weeks ago. I’m so proud of that little plant that I could squeal!
