I used to LOVE cooking with Mahi in the biz . . . cut into fingerlings and sauteed with butter, lemon and white wine an almonds . . . cut steak wise, over mesquite fire, with a cilantro and lime buerre blanc.

In the am. i like to put out the same energy for both workouts but rest the parts as we work very hard so a little more recovery time makes the work more effective and you keep the gains.

Believe it or not it is all about learning to coordinate your breathe with the movements. Takes a lifetime. But full use of the lungs is a wonderful thing espescially when the stress hits. Concentration and believe me the great atheles in football and other sport know how important meditation is in building concetration. Yoga is respected by all sports trainers.

and the stretching — a very good thing. i used to get massages from a yogi teacher (she trained yogi instructors). she was the only one to get my fake knee quad to stretch — oy such a relief. she was in boulder creek and i miss those massages.

Thanks for the reminder stretching is the best. It is kinda built in to hatha yoga as Eric Shifmann describes in his book “The Spirit and Practice of Moving into Stillness” Ali MacGraw does the foreward. He talks of pushing your edges make letting the breath move you through the energy lines. I could just do yoga for the rest of my life but am distracted by justice and fairness. Each day my awareness increases and exterior things have less influence on me.

And yes, I’m a professional cook. I also refuse to name myself a Chef because that title has been pillaged the last 10 years. Ever since the lowering of expectations in the culinary field. It’s kind of a joke now. Everyone who works at some shitty restaurant as head cook is now a “chef”. Anyone can get into Hyde Park, premier School in their day. It’s where the rich send their problem children to talk up their education. It’s become a shadow of it’s past glory.
Didn’t use to be that way. It was a hard earned tile working your way up through the ranks. It’s not about food creation/design. It’s about production menus, cooking line design,how is this going to physically happen, costs per item, menu wording to intrique.., training wait staff on the kitchen’s plan. It’s very complicated and takes balls to pull off.

I cooked for 60 last week for our guerilla community council event. We shook the status quo by having a free meal at the beginning of the Community Council meeting. Encouraging families to just come and eat. If the meeting makes you uncomfortableI then walk out, it’s all good. t was my “Babette’s Feast” moment. As a cook. How to translate community into a culinary moment. We frigging rocked!! It will change the politics of our small community. Because people were TALKING together, instead of waiting for the council to “tell” them what’s going to happen TO them. It was a milestone. And cost $150 to feed 70 people, because we went too heavy on the meat. Eliminate or cut down on meat, and it becomes do-able.
After years of ugly council meetings this was the first one to resinate “we’re all in this together”.

Openhope thank you for sharing something very important to all communities. taking control by cooperation and dumping those that are not helping is what we all can do. We have a group here called “Trasition Towns” They have not quite caught on how to get it done but are trying a model that has worked in other communities. (google)
