I usually use the 20 minutes per pound rule for birds, 25 for beef and 30 for pork. Course that’s in the oven, not on a grill.

Prime rib in the oven 500 degrees for one hour, oven off for five hours, and 350 to warm for one hour. Oven is never opened. This is after the meat is rubbed with salt and pepper.

It’s supposed to frost for the first time here tonight… I don’t think it will but the crisp night air with a bright low hanging moon and all these recipes made me forget about the senate finance committee for a little while. /s

Think I wil turn in.. in hopes of catching the votes in the morning.

Good night firedogs.

Um, I only use one alum pan.

And, I use the lid on the que, but I’ve got a good sized que or two.

The lid is mandatory, it keeps in the heat!

To keep the lid on, you’ll have to adjust size of your bird or meat, I guess.

Good questions, wish I had thought about them, now I will, when I repost at Betsy’s these holidays! Thanks!

And for you folks out there WITH thermometers, who check grill temps and meat temps, if you stoke the grill right and fully, you SHOULD see temps as high as 450F or more, for at LEAST two hours. For larger birds, 3.5 hours of cooking might be needed, for birds under 15lbs, three hours total should be good, PROVIDED you have temps of 450F or more for two hours. LOAD UP THE FUEL! *G*

Holidays are comin, I’ll likely repost this info for a bird, and some info for prime rib same process, at Betsy’s, on Foodie Fridays!

Or just email me for same . . . *G*
