Um, for those that weren’t here the other night, sunny and I were talking about kitchen calamities…
The bags seem to greatly reduce the margin for error, yeah.
Is it really that decisive? Just one committee, although an important one. I’ll be watching.

Seems like it will be.. though not the only one. Just looked at the cspan TV schedule 10 am to 12:30 ET. Not very long.
I think ES is right. Tomorrow is when we are likely to find out just what kind of fight Obama has in him. And the reviews are not encouraging.

Cooking times. Poultry seems to cook so fast that it seeps off the bones. Sunny’s example was as good as any, where the turkey ‘disintegrates.’
Disintegrates? Wow.
Actually an old friend tried a diet back in the seventies.. IIRC, chicken breasts, lemon wedges, quartered tomatoes.. and black pepper.. baked in a bag. Was so simple and delicious, even skinny boys like me asked for more.
margot’s on top of that. She has raspberry scented plastic razors that attract ants.

Perhaps the connective tissue in the joints melts under too much steam. My t’giving turkey collapsed on the platter. I was somewhat amused, my family not so much.

And how optimists would posit House will rule Senate (given House is more public oriented than Senate) I don’t get, that, not at all.
The Senate is the crux, and the devil, in this detail, regardless of the House Bills.
And in committee, Senate has the leverage, I believe, although I don’t know why or how.
I hope for better, I fear the worst.

If this speech is about healthcare then what are the odds that a Senator announced a bill to allow drugs to be reimported from Canada today? Either Obama was behind it or we got one very brave Lefty Senator with a great sense of timing who might be looking to move up in the Senate Leadership perhaps?

Someone from the administration will probably be sent out onto the lawn (I’m betting giggly Christina Romer) to ‘comment’ on the wonderful progress the Senate is making.
Put turkey, birds, what ever, in an aluminum pan, on top of carrots, celery, garlic, onions, and any herbs ya want. Use whole herbs, no need to strip thyme from branches, etc. Use whole garlic, in peel, no need to strip peels.
Once turkey, bird or what ever big item is seasoned, and located on top of mirapoix and herbs, load up half and half of chicken stock, vegan stock, beef stock as appropriate to big meat in question, and half and half white wine or red wine as appropriate, so it comes half way up the sides of the aluminum pan.
Cover whole affair with tinfoil tent, and set in bbq grill, with hard wood fire (I DISDAIN briquettes) that’s been heated up and then scooped to sides. Set the alum pan in MIDDLE, for indirect heat. Cover lid.
It will boil up fast, if yer rig is right. And the liquids will steam the bird or meat FAST!
A 20# bird on the bone will cook full in three hours, if ya load up the bbq fully with fuel.
At end of 2.5 hours, you open lid, pull the aluminum foil tent off, and brown skin on bird the last half hour or so.
And the herbs, and wines you use, will INFUSE the bird, any way you want. Hell, put hot red curry paste in there!
Me, I’m partial to thyme, rosemary and basil, but I grow them and they are always plentiful to me. *G*

And sorry, I’m going to rant for a minute here, but I’ll be goddammned if someone is going to call me NAIVE or UNINVOLVED when I have been out there videoing sites before, during (Digby linked to that film btw, way back then) ,and then after, especially as regards the healthcare issue.

I had all but forgotten Syd Barrett until Richard Wright died last year. Brought the whole thing back.
I think some GOP senators Dipper Dave even voted on a previous bill to allow drugs to be imported from Canada in other words that plan had more support than any healthcare plan we have now.
I want to see the GOPers run away from that vote now.

can’t let an Arthur Brown post go by unnoticed. wacky late 60s and 70s prog-rock (mostly noise IMHO), but his record Galactic Zoo Dossier furnished the name of the record store in nascent Silicon Valley where we impressionable young teens got turned onto a lot of better stuff, notably early Genesis, Gentle Giant, Caravan, Camel, etc.

And well, up thru the various forms with Danny and Jeremy (Kiln House), then with Danny and Bob Welch (Hero’s Hard To Find, Bare Trees, Future Games (MY all time fav) and a few more . . . it was grand music.

AND, I forgot to mention.
At the end, lift bird out.
Then strain some of the remaining liquids and drippings from the bird, take some of the herbs and veggies, put to the blender or processor.
Force THAT thru a fine mesh strainer, into a sauce pot.
Add or reduce stuff to it as needed, for flavor or to thicken.
No need to use flour and butter, lo fat and lower cal gravy.
I like to add the giblets and such that I’ve had in the alum pan, while cooking the bird.
Others prefer just plain gravy from the veggies and liquids and such.
Yer choice. *G*

ES, the recipe is a basic base, YOU use what ya like, for seasonings on the bird or in the pan.
Use beer, saki, whatever, for the liquids.
The KEY, is it boils up and steams and cooks and moistens and INFUSES, da boid, and you brown it at the end.
Or use any meat or fowl, or game, for same results. The process is killer, the flavors are for the cook to decide! *G*

So one store bought aluminum turkey pan will work over a three hour wood fire, or do you need two / double thickness? And I assume you don’t use a lid over the grill since a turkey is so large?

And for you folks out there WITH thermometers, who check grill temps and meat temps, if you stoke the grill right and fully, you SHOULD see temps as high as 450F or more, for at LEAST two hours. For larger birds, 3.5 hours of cooking might be needed, for birds under 15lbs, three hours total should be good, PROVIDED you have temps of 450F or more for two hours. LOAD UP THE FUEL! *G*

Um, I only use one alum pan.
And, I use the lid on the que, but I’ve got a good sized que or two.
The lid is mandatory, it keeps in the heat!
To keep the lid on, you’ll have to adjust size of your bird or meat, I guess.

I usually use the 20 minutes per pound rule for birds, 25 for beef and 30 for pork. Course that’s in the oven, not on a grill.
Prime rib in the oven 500 degrees for one hour, oven off for five hours, and 350 to warm for one hour. Oven is never opened. This is after the meat is rubbed with salt and pepper.
