the buyer had her final walk through today at 1am.
i went out to dinner with a friend last night (we had a blast) and then cleaned house last night until the wee hours for the walk through today at 1pm. unfortunately, my phone rang at 10am, 11am, 1145am and noon. my alarm was set for 1230.
sigh. i rolled outta bed, made the bed, and scooted out the back door. was gonna try for a nap today but that just didn’t work out.

Nah the Chili is slow cooking on the Stove as we speak… day two of cooking is almost over! Will let it cool over night and get up before 9 and get it warming up and start the peach/blueberry pie so when we get to Suz’s it will still be warm:>)

Neuro there is no set recipe for my chili I use pretty much the same ingredients but nothing is ever measured…
Good chili powder and lots of it..
Good peppers variety up to you but must have some jalapenos, serranos, Habanero, green bell and Red if you like the color… five or six kinds of beans, lots of cummin, lots of fresh blended tomatoes, good beer, onions, lots of garlic … ground beef, lamb and pork and brown sugar thats about it… Then as things start comming together you just keep adding till it starts to tast good … let it cook for a while then if not up to par you add some more of what you think will bring it the the flavor you want.. mild to hot it is all up to you and what you add and how much is the way you go with it.. of course you are always tasting:>)
Try it you will like it just be sure to use some of everything mentioned and you won’t go wrong, just don’t add too much of any one thing at a time!!

my dad taught me to use a dollop of real maple syrup when making chili.. just a wee bit to give it a deep almost smoky undertaste

in my house the meat would be limited to beef, there are those who do not eat pork or lamb
I wonder about the peppers, I like flavor and spice in my food but my mouth just cannot handle food as hot as some folks like, for example when I go to my favorite Indian restaurant I always order my food mild, because often medium is too hot for me, but then there are times that mild is too mild and I wish it had a little more spice. so your advice about doing lots of tasting is good. I know about jalapenos, and I avoid them. How hot are serranos and Habaneros? green and red bell of course are no problem.
what beans do you use besides red or kidney and black? those are what I have been using, what else goes good with your chili?

As for beans add some pinto and also you might find that any of the darker colored beans work well.. but do buy quality like S&W or maybe (I know I know) Bush Beans.. Oh I forgot I also use a large can of B&M Boston baked beans… and be sure to use lots of cumin brings out the best of the flavors…. You can also use just good cuts of beef and just cube it and be sure to brown the meat throughly with the onions, peppers and garlic… browning brings out the best in the meat flavors…

Whittier AK is a great and VERY interesting place ….. ET lived there for quite a while…… if you google …”the weirdest town in Alaska” … you get Whittier…
I loved my trip there–paid for by my employer at the time! Flew into Fairbanks, took the Alaska Railroad down to Anchorage (alongside or through Denali National Park, saw the mountain going by for hours!) then on down to Seward. Did not do any fishing, though. That would be another trip, and I would certainly hope to look up ET!
i looked at whittier in google earth. alaska has so much eye candy everywhere ya look. i wanna do the northeast too – haven’t been north of virginia since i was 2 and wanna see nycity, dc, maine.
have driven all over the west and south – we used to do car trip vacations back to kentucky and kansas every couple years to see kin.
Chocolate Torte saga, continued:
Got the torte, the dry ice and the expanded polystyrene all done according to strict spec.
Went to airport.
Was told that I had got to have some certification that the packaging was done by someone possessing some sort of certificate in such packaging! Or done under their (certified packer) supervision and they sign off on it with some sort of official indicia. I have a document making these absurd requirements here, now.
They had not told me anything like that when I made earlier enquiries.
It gets better:
I was distinctly advised that I could ship by priority overnight and that the torte would reach Suz’s party on Sunday around noonish.
When I arrived to ship, then I was told that they cannot get anything to Suzanne’s until noonish Monday! Nor love nor money nor irate cursing would alter that now.
On top of it all, the tariff would be about $138.00. Sheesh! A guy would think that for that sum they would give some service!
Soooo, I have a very professional looking (at least to me) parcel here with a lovely torte within. I am adding to the carbon dioxiode in my digs with the offgassing from the parcel. On an earlier thread someone mentioned having attended a Passover Seder. So I now recall that pious Jews go out and bring destitute people in from the street to share in the feast. In that spirit, I am taking the torte down to the Dorothy Day Center hereabouts Sunday (today). I know the folk there will be delighted.
I tried, really I tried. At least I got the chocolate shipped to me pronto. Little successes, anyway.
I’ll be thinking of you there slaving away for your chilli; the chilli sounds to die for.
I am utterly knackered, physically and emotionally. Been a long two days and lots of schlepping about.
BTW, the owner of my tower-block of flats apparently has discovered that he can rake in cash by allowing various firms to put houses containing microwave base stations on the top of the building. We have two now, and a third is to be put up there Monday. This really pisses me off: this exposure to EMR and all this RF energy is dangerous. Germany has already banned some of this, as has England. And they want us out of our homes Monday because they are using some sort of radioactivity to “see” through the concrete slab floors to position their conduits. And they advise we leave all day Wednesday because the noise and vibrations from the coring is extreme. I have got to disturb my elderly beloved cats for this shit.

The Alaska Railroad is owned by the state, but has some very nice luxury view cars that I had the privilege of riding in, courtesy of the conference management…I have heard that one or perhaps more of the cruise companies have a package deal where you can go one way along the coast, then the return trip is by train, or maybe vice versa–I would look into that if I ever went back, as have not done the cruise thing.
but it seems I should first be thinking about getting to Hawaii!

i refuse to be subject to the tsa illegal searches so i haven’t flown since before 9/11. hmmm, i wonder if i can take the train up there… that would be a lovely way to see alaska. i also want to take the cross canadian train journey – saw a pbs show about that great train ride and i added it to my list.
i don’t recall stopping. i remember us kids begging dad to stop at every place we saw but he was a drive until we get there kinda guy, stopping only for food, gas, and sleep.

Elmore and I took the train from Anchorage to Whittier….. That was a wonderful trip….. then the 50 some glacier boat trip across Prince William Sound ….. then the ferry to Valdez & Cordova…… Cordova is interesting…. there are no roads in or out …… you either fly or come by ferry……

The train runs from Eugene OR to (I think) Bellingham WA….. My parents used to take the ferry from Port Angeles to Alaska….. do some googling on the Alaska Ferry system and see where they dock…….

I used to live up in Bellingham and we considered the BC ferries to be poor person’s cruises. Sometimes we went to Victoria and stayed the weekend at the Princess Hotel. We did a lot of backpacking up that coast, too. Wonderful, beautiful places.
In my day BC ferries still had white tablecloths and proper china (or at least ceramic) cups and saucers whilst the Washington State Ferries had formica and styrofoam cups.
I suppose you remember all of this.

nahant, it just occurred to me that you did not mention tomatoes in your chili. do you use stewed tomatoes, tomato sauce, tomato paste, fresh tomatoes, or anything of the tomato kind? I would not have thought of chili without some form of tomatoes…

i remember talking to nahant about his garden – he said he uses tomatoes but not the fresh ones from his garden – they are too good to go into the chili and barely make it inside the house sometimes before he has eaten them.
he mentioned canned tomatoes but not the style.
I normally use a couple of cans of diced tomatoes, but would consider using any recommended alternatives…
I am sure I did ,,, but yes you can use both fresh, I like to put them in the blender with some of the onions, garlic and peppers… kinda melds the flavors together and yes canned tomato sauce (I use Hunts) works just fine to make sure there is plenty of liquid in there for all the cooking time it needs..
LOL this has become somewhat of a food/travel thread…bet you had no idea it would go those directions, Suz…

Good memory Suz… I do use fresh store bought tomatoes but buy the good ones:>) not the hot house gassed ones… that is one reason to make the chili when the tomatoes are in season,,, maybe get them from the farmers market… as in anything you cook always use the best ingredients you can:>)
oh, you are right, nahant, you did mention fresh blended tomatoes, somehow I overlooked that
we currently have one tomato plant that is thriving in our high heat/high humidity atmosphere, don’t know the variety, are there particular varieties you recommend?
I don’t grow many tomatoes because I have never much liked to eat fresh tomatoes, prefer them in some cooked form…maybe I just haven’t tasted the right kinds

Oh you don’t know what you are missing! I like to grow several varities such as romas red and the yellow, Sun Gold, sweet 100’s, early girls, mostly the small to medium ones… I just don’t like the big big ones such as the beefsteaks… to much and not as much flavor… my opinion…
I am having trouble understanding why some think that it is too hot or too humid or both, I have been very successful in that kind of weather back east when I lived there.

Good evening folks. Read yout comment after reading the Ian and Kirk posts. just love getting data that is critical to our planet and to it’s economoc system we all depend on. They do great research abd cause interesting comments.
I’ll be on the road by 10 AM to the Pod Packing Partry. Gave the Volvo wagon a good blowout with my conpressor air (was a rolling trash can), a washing and oil change and lube around.
Got some drinks for the road (apple juice with cloves, lemonade protien drinks and cucumbers to stay cool). The furnirture dolly is loaded and car gassed up. This is a big carbon footprint splurge 260 miles but will meet some folks I admire so worth it. (1/4 of my yearly driving)
Also bringing along the script writer and the screenplay a satire on the Bushco administration. I will skip breakfast and bring an appetite for hot chili. Hopefully will clear sinuses!

SAIC was commissioned by G. W. Bush in 2002 to construct a replica of a mobile WMD laboratory of the sort used by Saddam. This mock up, supposedly destined to be used to train teams searching for WMDs in Iraq, was designed by Stephen Hatfill, the WMD expert now being harangued into isolation and thus silence by Bush’s FBI. Last spring, the Bush administration handed SAIC some of the biggest defense contract plums to be had -a billion-dollar chunk of the NexGen business and an unbelievably porky 10-year contract worth over $600 million.”

In January 1999, new SAIC consultant Steven Hatfill and his collaborator, SAIC vice president Joseph Soukup, commissioned William C Patrick (a retired leading figure in the old US bioweapons program) to report on the possibilities of terrorist anthrax mailings in the United States. (There had been a spate of hoax anthrax mailings in the previous two years.) Barbara Hatch Rosenberg said that the report was commissioned “under a CIA contract to SAIC”. However, SAIC said Hatfill and Soukup commissioned it internally — there was no outside client.
Patrick produced his 28-page report in February 1999. Some subsequently saw it as a “blueprint” for the 2001 anthrax attacks. The report suggested the maximum amount of anthrax powder — 2.5 grams — that could be put in an envelope without producing a suspicious bulge. This was just a little more than the actual amounts — 2 grams each — in the letters sent to Senators Tom Daschle and Patrick Leahy. But the report also suggested that a terrorist might produce a spore concentration of 50 billion spores per gram. This was only one-twentieth the actual concentration — 1 trillion spores per gram — in the letters sent to the Senators

MoDo has produced an unspeakable piece of crap titled “Mr. Darcy Comes Courting,” in which she snarls that Barack Obama is a modern incarnation of the clever, haughty, reserved and fastidious Mr. Darcy, cherished hero of chick-lit. Mr. Friedman says “The Iceman Cometh,” and writes about climatologists in a research center in the Arctic Circle, building a picture of the Greenland climate from the ice age through the present warming period. Olivia Judson, from London, gives us “Feel the Eyes Upon You,” and asks a question: If you sensed someone was watching you, would you do it?
