Hi suzanne, pups.

Rainy and cold, weather sucks, saw some farms under four feet of water while driving to Trois-Rivière.

There’s lots of asian groceries here in Grand Rapids too. :P We’ve got a pretty high asian population in general so the stores are always a mix of japanese, korean, vietnamese and chinese foods and items. The nearest local one by me has some good priced tofu.

I remember hearing that. (i don’t cook as often as i should, either) I never know exactly what firmness they use in the miso soup at my favorite restaurants though. I’ve yet to have the level 1 type yet, thanks for the warning. :P

What do you use soft Tofu for? I always want the firmest I can find, cuz otherwise it disintegrates in the dish.

Some oriental dishes call for it, but, like I said 3 has the best consistency for most dishes… If ya want even firmer tofu you can press it yourself by wrapping it in paper towels and placing a weight on it for a couple of hours…! ;-)

heh, Missy, we grow some magnificent bananas here… In all shapes and sizes…! ;-)

here is their recipe..it’s pretty close to mine

Preparation time: 15 minutes

Cook time: 20 minutes

Ingredients:

2 ripe bananas

1 cup buttermilk (or just milk)

1/3 cup vegetable oil or vanilla oil

1/8 teaspoon baking soda

4 teaspoons baking powder

1 ¼ cup all purpose flour

1 tablespoon vanilla extract

2 eggs

A pinch of salt

Vanilla powder sugar

Cocoa Powder

Ground cinnamon

Vegetable oil for frying

Preparation:

Preheat a frying pan at medium-high heat and pour the oil. Peel and smash the ripe the bananas in a small bowl and put them aside. Whisk the eggs in a large bowl and add the vanilla extract, and vegetable oil. In another bowl sift the flour, baking soda, baking powder, salt, and sugar. Add the dry ingredients to the egg mixture and whisk until all of the ingredients are well mixed but do not over mix.

Spoon the batter into the frying pan with a spoon and deep fry until both sides are dark golden brown. Remove from heat and season with ground cinnamon. Before serving sprinkle your fritters with vanilla powder sugar and cocoa powder.

Serve warm.

Yield: 15 fritters

brasil is just tropics. in the north, tropical fruit and sugar (all native) and in the south coffee. i have never had good banas in the U.S. and that includes Hawai’i. no offense, just my tastes
