Hello, everyone! This morning I'd like to share with you a recipe that, unlike Cindy McCain, I actually made my very own self and didn't rip off from a website: Chicken Asparagus Lasagna!
Here's what you need:
1 13 x 9 x 2 inch cake pan
Six lasagna noodles
8 oz chicken breast, thinly sliced and cut into 1-inch segments
2 green onions, with stalks
2 celery stalks
3 to 4 garlic cloves, mashed or sliced
8 oz asparagus
15 oz ricotta cheese
3 cups (12 oz) shredded mozzarella cheese
2 eggs
2 oz chevre (optional)
A few tablespoons of olive oil
Boil up the lasagna noodles (with a touch of olive oil in the water to keep them from sticking) until they are fully cooked; while they're bubbling away, mash up the garlic and sauté with the chicken in a hot frying pan with a little olive oil, just enough to coat the inside of the pan. Set chicken aside and drain noodles, then lay noodles flat or fold gently in half and set aside (again, a little olive oil helps to prevent sticking). Blanch asparagus in microwave for a minute, then chop into half-inch segments. Chop green onions and celery into quarter-inch segments.
Mix ricotta, eggs and two of the three cups of mozzarella. Place a teaspoon of olive oil in the cake pan, then put two of the cooked lasagna noodles in the pan. Next, put in a thin layer of the chevre (if you're using it), then half each of the ricotta-mozzarella mixture, the chicken, the onions, and then finally the celery. Slap on the middle two lasagna noodles and repeat the previous step with the rest of the ricotta mixture, chicken, onions and celery. Cover with the last two noodles, then cover the pan with tinfoil and put in a 350F oven for 45 minutes. Pull out, remove the tinfoil, cover the top noodles with the last cup of mozzarella, and put back in the oven minus tinfoil for another ten to fifteen minutes. Let stand ten minutes before cutting and serving. There should be enough for eight great big pieces, and just one piece with a side dish and salad is great plenty for even the hungriest person.

Saves my lazy brain from thinking about what to make for the coming week. I’ll freeze what I don’t eat tonight and have a piece every few days. Not much of a carnivore but a little chikn now and then….
Off to the whole foods store then the hardware store to buy a hoe. Haven’t hoed a plot of land since I was a kid. This is gonna be interesting.

That’s what I like about it: It’s not meat-intensive. In fact, you could probably skip the chicken if you wanted, or replace it with something else.
Peckish or not, I looked it up.
The French call fresh goat cheese “Chevre.” We call ours Capri. It is relatively simple to make. In short, we add a culture and a (vegetable based) curdling agent to fresh goat milk and allow the curd (solids) to separate from the whey (liquid), and then add salt to the curd. The whole process takes just four days. It is delightfully smoooth and distinctively tangy. Whether called Chevre or Capri, it is farm fresh and delicious.
Goat cheese. Fatty & delicious. If I ate 2 ozs. of it, I’d have to jog an extra mile per ounce.
What would you substitute for the chicken?

I just googled chevre …it is a cheese …looks kinda like ricotta, but made of goat’s milk, right?

For a non-meat recipe? Probably tofu, or sliced water chestnuts. If I wanted to make a meat sub, turkey would work. Or maybe even sliced ham… hmmm…
Comes in different consistencies. Some is sliceable. It’s delish, but loaded w/fat, unfortunately.

Looks like it is pretty fatty all right …but MMMMMM! What could one substitute for this cheese that would be as good as well as less expensive? I am from the Pacific Northwest and it USED to be fads, clothes, food and things from the East Coast took two years to get here. Now things happen faster, but it took me several years to discover brie cheese in the 1980’s (and become instantly addicted) and since I am low income and not of the “grey poupon” crowd, well I am just ignorant .
Maybe much like when my brother in law, who does not even LIKE seafood, told me crab was just so much better with butter when I was perfectly happy to eat crab without it before then, I am better off ignorant, right? LOL!

I use zucchini in almost every baked meal these days. Hard to imagine why it wouldn’t work here.

Here’s a lasagna recipe that’s killer:
Brown 1 lb Mild Italian Sausage and drain.
Add 1 clove minced garlic, 1 Tbs. basil, 1 lb can of tomatoes, 1 12 oz. can tomato paste.
Simmer the above for 30 minutes while preparing cheese mix:
3c creamy cottage cheese, 1 pkg frozen spinach (drained), 1/2 c. fresh parmesan cheese, 2 beaten eggs, 1 T. pepper, 1 lb. mozzarella cheese while cooking 10 pkg noodles.
Arrange noodles, cheese mix, and meat sauce in 19×9x2 pan in two layers. Cook at 375 about 35 minutes uncovered. Let sit 5 minutes B4 cutting.
The meat sauce will appear to be dry, but don’t add liquids. Also, don’t scrimp on the pepper!

Where do you live? We still have snow on the ground here (VT) but it is also going to be 70 degrees today. May very well going skiing tomorrow - last time till November I’m thinking.
I use that cheese for a substitute for ricotta or feta. Also, in sandwiches and salads.
Am going straight to the market, after I get dressed. There’s a Vallarta real close, but next time I’m at Trader Joe’s, I’ll check out their stock.

Food photography is a craft of it’s own. I interviewed in another life to be a photographer’s assistant for a cookbook. I was amazed at the intricate details that the stylists had to consider.

It’s true that I have never observed much STRESS among the french- except when someone’s wife is about to have an unplanned meeting with his girl friend.
Spent a few days in the country with an old french guy- he didn’t speak a word of english- and I spoke no french- but we had a very pleasant time getting roaring drunk on local wine and playin “bowling”. He must’ve been a hunred– smoked Galois.
The finding helps keep the rule in the courts until the next Administration drops it.

I just know myself- if I still smoked, ate like the French, & didn’t jog, hike, & go to the gym I’d feel crappy, have high blood pressure like the rest of my relatives, & weigh 160 lbs. instead of 120.
IMO metabolism & personal health factors are, well, personal & individual. Always like book recommendations, though, & will certainly will have a look @ that book.

When I’m in France, it’s soccer all the time, and, or, cycling a 100 miles a day.
The difference is the diet, more mediteranian with tons of fresh produce.

Anyone wishing to skip the boiling the lasagna step can buy “oven ready” lasagna. Ronzoni makes it, among others. Just pull it out of the box and stick it in the lasagna dish. The moisture from the other ingredients turns it soft.
