With cautious optimism and more than a little gratitude for Democrats in control of the people’s House who finally allowed the Orwellian named Protect America Act to expire this week, I thought this little video summed up the event neatly. Ladies and gentleman, I present to you, The Penguin Cafe Orchestra performing Telephone and Rubber Band.
What’s on your mind tonight?

Christine E – i learned that gravy from one of my kansas aunts – it used to make bisquits and gravy for breakfast – only addition is some crumbled up sausage to make it a meal.
Damn, that’s good information. Thanks Mary.
g’nite katymine – the meetup here isn’t until march 2nd
Aloha, Katy!
From Rep. John Conyers:
Yesterday the House of Representatives took several historic steps towards protecting our system of checks and balances. First, by a vote of 223 to 32, the House passed resolutions referring criminal contempt citations for former White House Counsel Harriet Miers and White House Chief of Staff Josh Bolten, as well as authorizing civil actions against them should the Justice Department refuse to prosecute. Second, we did not succumb to the White House political pressure concerning the Foreign Intelligence Surveillance Act.
Yesterday’s contempt vote upheld the simple Constitutional principle that no one is above the law. If an ordinary citizen could not ignore a subpoena without facing severe consequences, the same must hold true for the White House.
As the morning’s papers covered this story, many of them recount the Judiciary Committee investigation that began a year ago. They talk of the fired U.S. Attorneys who testified, the thousands of pages of documents produced by the Department of Justice, and of the subpoenas ignored by the White House.
I hope that as you read those stories, you will remember that the path to today’s contempt vote did not begin with just a subpoena, or a hearing, or even the firings in December, 2006. Rather, it began with the Bush Administration’s politicization of Justice and its refusal to submit to congressional oversight. I commend my 232 colleagues who joined me in voting to hold the Bush White house accountable and who stood up for the rule of law.
I also want to commend the Democratic Leadership for standing up to the White House yesterday and refusing to succumb to political pressure concerning the Foreign Intelligence Surveillance Act. Last August we allowed ourselves to be jammed by the Senate and the White House. Yesterday, we stood up in the face of the pressure and let the President know that we intend to do our jobs as legislators and not hastily pass the flawed Senate bill with retroactive legal immunity for the telecommunications firms.
The White House, of course, has complained bitterly about the contempt vote as they have with many oversight actions Congress has taken. I have linked to some articles that show breadth of this bluster.
Much more remains to be done, but this week, we made real progress. With your help, we all made a difference, and the nation and our constitution are stronger for it. Thank you.
Thank you again for your continued support for a better democracy.
Your Friend,
John Conyers, Jr.

It occurred to me today, while writing up the title. We should have renamed the PAA as PAAndora.
Not exotic but tasty/easy:
Pack of rice
Can Beef Consume
Can Mushrooms
Chopped Onions
Brown the Onions in Oil/Butter
Add mushrooms to consume & cooked rice and mix
Wine mixed in optional
Or bacon, what doesn’t bacon make better? On the other hand, my first attempt at gravy involved a cup of flour and a blender…good thing I was very cute in 1975.
Is that people food or pet food? :)
Heh, Sh*t on a Shingle…!
Is this an appropriate topic for this blog? WTF happened to Rock & Roll Friday?
That’s sushi isn’t it?
I only came in on recipes … let’s do Rock & Roll Friday!
Heh, you’d be taken out back and shot, if you tried to use boil in a bag rice here or Minute Rice…! *g*
Lets get ready to rumble
Willie Nelson and Norah Jones

Hey, how many rock and roll songs sound like they want to put PAAndora back in the box? *g* Maybe Pink Floyd..
We may have to turn RBG into a penguin and send him to orchestra school.
I blame punaise.. he made me order Becks trilogy. Messed up my schedule in a rockin’ way.
But will you be my Raving Bunny?
There’s some weird sh*t on Youtube…! *g*
Chipped beef on toast..haven’t had that for at least 50 years..I will have to make it as a surprise for the GF.
EPUd: I just got here and it’s all about pet-food recipies. attack. Attack. ATTACK.
Oh, what the fuck! It’s the beginning of a long weekend. Let’s attack manana.
I just watched Moyers and Olbermann, back to back. They make me believe there is hope.

my navy father taught me that chipped beef on toast is not the same thang as biscuits and gravy.

Yeah, hiding while I say it, though.
Delightfully politically incorrect!
Sounds like a good show, Brancachio(sp?) is on right now…
OMG, 707! That’s painful. Inside PAAndoras Box..)
Ah hahahah. You made me laugh out loud :-)
The Wall
welcome to the machine
I liked the movie.
He was correct..The gravy, for biscuits and gravy, is made from the fat derived from frying sausage or bacon.
Choking…LOL!
It was a horrible mess — I had to move to France to learn to cook.
he usually was – cook in the navy for 20 years
haha. RANDOM CRACK XD
Nice one, RBG.
You poor dear.
So did we, and the music was wonderful, really, the best.
UnUmmagumma – parts one and two
Hey Margot,
I was a terrible cook, and Mr.CE taught me how to eat, before I could cook.
If I say something about Bill Mahers show tonight, will I be violating spoiler protocols ?
I cannot stop looking at Raving Bunny and Penguin. I already emailed it to my daughters.
i don’t have hbo so i’m not the person to ask about spoilers for mahers show. i have no idea when it airs
Wasn’t he on at ten?
We get it in fifteen minutes on the Left Coast…
Just don’t make it too specific :-)
Rock’n’Roll?

Claire McCaskill was on Real Time.. Bill asked her about the Senate immunity ordeal.. and noted she voted with Rockerfeller et. al.
She said people can still sue the government.. So I guess Arlen Haggies got his way.
Gosh I hope not — it was wonderful!
Goddamnit! I want to sue the telecoms!!!
Shit.
And thanks.
That makes a lot of sense.
Margot, still here?
Right here!

Hiya — watching American Beauty, and am in awe.
I doubt it, but wonder if it means we can still prosecute the president for asking the telecoms to violate law.
Just home from the annual organizing meeting of the Matanuska-Susitna area Democrats. Big crowd. We organized, held elections and prepared for our role of hosts for the state Democratic Party convention this coming Memorial Day weekend, where we expect thousands.
I was elected secretary of my legislative district, and secretary for the Mat-Su area, which is larger than six states and six territories. It’s gonna be fun taking this area back over from the GOP!
“Because the world is High” — American Beauty.
That’s the question I have for Senator Whitehouse.
His assertion is that some of the telecoms “acted in god faith”, and I assume that the executive branch pressed them with Article 2 (as well as contractual inducements) to get compliance.
But these telecoms have rooms full of lawyers whose jobs are to measure strict compliance with FISA warrants.
Their lawyers said this was legal?
It’s not just the corporate executives who are in deep shit here if FISA isn’t made in Chimpy’s image.
god faith = good faith…
Dr. Freud?
channeling boosh again i see – i think boosh is scared of them nasty trial lawyers going after him for the false assertions that it was all legal
Thought about you when I pecked out this comment earlier..
We need to keep our ears open for mutual Blue Dog friends in our states. In the spirit of keeping Dems honest..)
As much as I’d like to nail Chimpy to the wall for this directly, his legal cover has always emanated from the DOJ’s Office of Legal Counsel.
I really want them called out. And with that, Chimpy’s entire rationale for being dissolves.
If immunity ties up telcos in a way which they cannot divulge their records? However, immunity ought to do the opposite.. like free ride/ corporate fifth or some such.
someone is very afraid of what will be revealed in a lawsuit. or multiple someones.
i’ve uncovered napoleon dynamite’s inspiration. zomg!
It is hard for an Alaskan to be elected dogcatcher if he or she is opposed to opening ANWR to drilling. That’s the main reason McCain came in last in the GOP primary here.
I’m going to be on the platform committee at the state convention, and hope to have a major say in how we word that particular plank. I think the money that would be spent to develop ANWR could be better spent on direct applications of alternative energy – here and elsewhere.
I’ve never seen it; how did I miss that one?
Muzzy! Too funny.
Yep. Those corporate execs have zero protection without updated FISA, once ChimpCo is out. And the next AG will have to follow it where it leads.
I think this is the big one.
Excellent news, ET. I hope an area the size of 6 States is big enough for you and Diane.
i think they know that wall of defense is very vulnerable – which is why they are so freaked out – i sure wudda not wanted to be the poor schmo who got to tell cheney there was a hole in the firewall.
Learn to duck!
Since NSA is cut off.. I feel so, so ignored. Maybe I will send them an email next week. /s
When I stumbled upon tonights youtube.. I checked out the guy who made it youtube page..
I already liked my quirky idea for the post.. but that just sealed the deal.

Congratulations, ET. By the way, a murder victim on the PBS mystery series Jericho tonight also had the pseudonym Edward Teller.

heh…..
Arnold needs to listen to his wife and endorse the change guy.
He was Orange County Rep. (S.Cal). Orange County went bankrupt from securities fraud while he was their Rep. Yjay is insane to have him overseeing the world economy!!! How can this happen?
Well I needed some good news, thanks for the link!
Nationally, that deficit in the CA GOP matters. But you watch – the CA Dems will throw their Gubernatorial race to the next-in-line party hack (we just can’t get enough of our hacks), and the next grinning, star-powered Gooper will get 2 terms.
Crazy state.
Never had the good fortune to visit your side of the country but there look to be some lovely places to explore.
That said, California and Texas sure seem to contribute more than their fair share to the national misery with the pols they produce.
Chris Cox was running Securities Exchange Commission for Bushco. He retired form the house to serve as SEC chair
Cox Presided over the Sub Prime real estate bubble fiasco. He was from Orange County Ca which went bankrupt. Was he a yeas man for Wall street, Dodd had him. Bernanke and Pauson up at the Banking committee this week, Dodd was very pissed ut controlled.
This is a big deal how the investment banks were allowed to rip off trillions from investors all over the world and cause a capital black hole in the credit markets. Fascists at work.
I blame punaise.. he made me order Becks trilogy. Messed up my schedule in a rockin’ way.
oopsie…my bad.
Penguin Cafe Orch. – it’s been a long time. love their mastery of the slow-building droney groove. IIRC members of Caravan or Brand X were involved.
Just saw the Moyers’ Journal replay here in Hawaii. That duo in the segment on The Debt Dilemma that wrote the book on the budget that Moyers likes so much. If I remember correctly, they say that even if you take away all the war spending, and roll back all the Bush tax cuts (except for low and middle income tax payers), the budget deficit is still growing so fast that Medicare and Social Security, and possible tax *increases* must still be considered. From the transcript:
Is this right?
Bob in HI
G. Love – The Hustle
Continuing my post@98, on the Moyers blog, several commenters dispute Scott Bittle and Jean Johnson’s assessment of the cost of the war and the Bush tax cuts. But none provides enough actual data from a reputable source to actually see the facts. Anyone know of a good place to see the relationship between the size of the spending for the war in Iraq and Afghanistan, the loss in revenue from the Bush tax cuts, the growth of the annual deficit, and the expense of Medicare and Social Security, all in tabular or graphic form so that one can see whether Bittle and Johnson are right or not?
Bob in HI
Bob, I have no idea, but look forward to learning more. One bit of framing which always annoys this rabid anti MIC lamb is how the defense budget is separated from war or occupation.. It’s all one, imo. We spend a trillion or more per year on MIC, considering defense, war, intel, energy expenditures and debt interest. Last I heard China was next in line in MIC spending @ 50 billion.
Kucinich and Paul were onto something.
that’s it for me tonight, pups. g’nite all

Something I always wonder. Our economy is now pretty much based on the consumer now, not what we produce for others. So that is why Bush always wants us to go shopping and now what underlies the stimulus although for the life of me, I can’t figure out how sending those dollars overseas will help!
Instead of focusing on off-shoring, shouldn’t we be paying some attention to keeping some jobs here in order to manufacture things we actually sell besides services so people will buy from us again. It would sure as hell help our trade deficits and let the consumer off the hook. We all have far too much crap anyhow.
I am shocked when I go into little people’s rooms/houses now and see them piled high with toys, toys, toys. In other countries in the same middle and upper middle classes, kids seem to have only about 4% of what our toddlers have. There is something wrong here. Don’t get me started about huge houses crammed with stuff for the adults too! I have spent lots of time out of the country in the past and recently. Europeans and South Americans manage to be very happy while collecting far fewer “things”.
Just a cranky but continuing thought these days.
Joining you in that “crank”. ;-(
Pretty sure there is some newly coined term for a movement away from the more-more-more “stuff” attitude but can’t remember what it is at the moment.
Sorta cool. Plus, Fritz Lang!
There is no
successexcess like Americansuccessexcessdoes that work?
Well, whatever it is, I’m ready to join. Have spent the day unpacking box after box in the new place. What is all this stuff, and why do I need it in my life?
On the plus side, I now have furniture. So all in all moving-in day has been pretty interesting.
I think my books have far outnumbered any amount of clothing i actually have in my various moves the last few years. ^^ I know the feeling. I’m just glad that my clutter isn’t half so much as that of my parents. Even what i left with them? Is just more books! I’d say those, CDs, and a mishmash of DVDs is about all i have in force. My magpie tendencies aren’t so much towards the shiny tech as some of my friends or else just people who get more. I’ll shop for clothes at Goodwill, but buy books new unless i can find a good online seller for used ones.
Living down on a stripped down budget does that, besides my own tendency to just ignore shopping. (Until i see a new book or manga(japanese comics) i want, or an old cheap movie on DVD i’ve wanted for a while! Or anime!) Even my convention trips, i come back with a lot less! Except i went more expensive and splurged on a vintage kimono..*sighs happily* But that was WORTH the money.
Ok but alias, that kimono makes you happy every time you think about it. I’m wrestling with the boxes full of random stuff accumulated for some past purpose which I barely remember.
Our library [well, make that the library in Virginia] is happy to take most anything except for textbooks. I felt good about donating some books that I’m really not going to read again. Kept some that, like your kimono, make me feel happy when I see them.
Hmmmmmm, not exactly what I had in mind. *g* How about just plain “greedy”? And don’t get me started on the McMansion issue; it would be reallllllll hard to feel sympathy for families losing one of those to the housing crisis.
Hey, eg! So glad to hear you’re getting settled into your new digs. You’ve heard those funny stories about people who move and find they’ve paid good money to transport all sorts of weird stuff half-way across the country….including bags of garbage.
alias -
Splurges that make your heart happy come under the classification of “investment”. :-)
That’s what i did when i moved over here. I brought the books i treasure the most on the first move. Now that i’ve had my own apartment for some time, i bring back handfuls of what i left over with my parents from every visit. At the moment i think maybe a handful of the books i have would go to the library for donation that i have with me. Music and books are my first love, so that’s pretty much what came with me. My computer just fuels those loves and gives me better access to more information that i need otherwise. I have some accumulated childhood treasures, but not many. Those are still with the parents too.
My niece gets the benefit of the fairy tale books that i devoured when i was just a bit older than her current 4 years of age. ^^ Old World tellings of Grimm’s Fairy Tales, and stuff from all over europe. Another one with short stories from everywhere. Even a decent retelling of Bellaphron and The Chimera, which is a legend only some even heard about because of Mission Impossible: 2. (i giggled for a moment when i heard them mention the names!) Those two books fueled my fascination with mythology from EVERYWHERE. Which has settled for the moment on asian and hindu myth/legends/folk tales.
Glad your move has turned out okay! I’ll stop babbling, i think it’s time to head to bed. 5am. *glares at clock*
When I go to someone’s house for the first time, the three things that tell me what they do or don’t value are books, art work, and plants.
[scribbles note to self to get some plants before Waccamaw comes over]
Morning, all…
Yep, and how they arrange the furniture…
Good morning Biodun!
This last year I made a move as well, still have not completed everything, probably never will fully settle. Books were the BIG item, plus pots and pans. Installed my first NEW cocina ever and bought new furniture as needed. That part is nearly finished. I have been looking at plants at the Sunday Mercado but haven’t settled on anything yet, there is no real balcony to keep them and the parquet floors would be damaged if water got on it. Being of the male species, I haven’t a clue on curtains, windows are bare. There are things I KNOW I had but are no longer about, and I haven’t a clue what happened. The gremlins who hide stuff were brought along as well.
Bonjour, egregious…ca va?
Moving is one of those major stressors that therapists like to talk about. Divorce is another…now egregious, you’ve just gone through both. How are you feeling in general today? If you can’t respond, I understand…
And incidentally, I ask somewhat delicately, whatever happened to Rayne? She seems to have disappeared…
1,757 DAYS ANJD THE KILLIN’ GOEZ ON AND ON AND…
Citizen Biodun and the Crazy Early Mornin’ Firepup Patriots:
Yo Biodun, where you at right now kid, you home fer a bit out here on the frozen tundra?
KEEP THE FAITH AND REMEMBER GLOBAL WARMIN’ WILL GET THEM TOO!!
In good old Minneapolis, MN, where it’s supposed to be a balmy 31 F today..
Hey Biodun. Short answers, because of being sleepy: Rayne was fine last I heard from her, ridiculously busy, I see her over at Marcy’s from time to time.
Being divorced is something that has been coming for a long time so I’ve had a chance to think about it. I’m optimistic about finding another close relationship sooner or later. Need to be patient.
Moving, on the other hand, feels like the crisis du jour. Logistically everything is coming along well, I’m a good planner and organizer. I think my biggest fear was I would be isolated and alone, and that has not happened. People here are very friendly and are especially kind when I say I just moved here. And of course you guys on FDL have been a solid source of support for me, much appreciated.
Miss you folks in the early morning crew. Maybe that’s the reason for this insomnia, a chance to catch up.
double post…FDL hiccup?
Yes FDL community is usually supportive in these kind of cases. Ever since I’ve become a front-pager, I’ve ben telling my other friends: Look, how often do you get a job that also comes with a readymade community of friends and colleagues–further, who also share similar political points of view? It’s a wonderful feeling indeed.
And yes, there are great FDLers in your new location.
yo
Years back I moved on to my sailboat. I gave everything I had away except what could fit on the boat and made sense to have. Clothes I hardly needed as I was bound for the Caribbean.
Music I took, books I would buy and then swap with other sailors. You learn how few things you really need. Didn’t have socks for 3 years, a few deck shoes. I loved having little.
When mother died we had to get dumpster to toss out accumulated junk we couldn’t give to charity. I am constantly fighting mu wife who wants “things”. but she was denied them in her past and feels she missed something.
I finally got an Ipod and crammed every CD on to it… now I have one little tiny “thing” instead of hundreds of CDs. Marvelous. I long for less and less and since I have no children I intend to leave “here” with zero or close to it.
Possessions are obsessions.
He’s got a Caribbean soul he can barely control!
Yo–what’s up for today Saturday besides the book salon? In other words, is there anything else in your life besides FDL and your wife?
Latest from Chimpy in Africa:
“Who could have ever imagined that Condi would have no success whatsoever in Kenya?”
Good morning, pups. It’s Collins and Herbert in the NYT today. TOMC’s column is titled “The Mittification of McCain.” She says John McCain’s inconsistency is actually nothing new, and that we saw a lot of it during the Bush tax debates. Mr. Herbert has a question: How is it that you can have a rampage in broad daylight on a street in New York City and not be able to show in any way that the rampage occurred?
http://mgpaquin.wordpress.com/
The coffee, tea and hot chocolate are ready. There was some mention of it earlier in the thread, so for breakfast I’ve got biscuits with gravy and scrambled eggs. If you have a cholesterol problem stay away! Or just have a biscuit. Have a great day.
Good morning everyone.
egregious, glad to hear you’re getting settled. I was thinking about you and your move this week.
Good morning Marion!
I just sampled some still warm hawaiian bread here!
Sampled – HAH – I had 2 fat slices with real butter… ….mmmmmm
Decided a number of years back to do away with the margarine junk; if it ain’t the real stuff, would just as lief do without. Actually, now only buy the unsalted variety since recipes often call for that specifically.
Sucking up those biscuits and gravy sounds awfully good.
Did anyone notice that the sky didn’t fall the other day when the House got some balls? What the hell have these eejits in the House been worried about?
Marion! you got the vibes emitted when I woke up this morning. I was thinkin’ scrambled eggs, nice fluffy scrambled eggs. With some Monterey Jack tossed in at the last minute. Of course, in truth it was a bowl of Wheaties and kitteh b finishes off the milk now as I type. I ’spect Millineryman’s enjoying a croissant of one sort or another.
Mr. Marion in Savannah has said that from time to time I’m
psychoticpsychic…Had your scrambled eggs at 4 a.m…….has someone put vibes in the Lake water?
Haven’t made it out the door yet. I’m in awe of Marion’s recipe with bacon, butter and sausage for the gravy.
You’re right nomolos, the sky didn’t fall. I’m rooting for more of that!
and Waccamaw,
hmmmm …
there, slightly amended ,-)
That New York “rampage”… …just sick.
Because they can. These are the kids without lawyers, or parents willing to speak up LOUDLY in their defense.
so, was this fisa showdown the watershed where the house of cards that protects bush comes to a crashing end?
will this fisa showdown finally prove to our elected officials the more they challenge these criminals the higher their approval will soar?
will pelosi finally realize she cannot let the depravity of this administration be set in the stone of presedence?
will they FINALLY begin proceedings afainst the crimiinals of our country and bring them to the bar of justice?
I don’t think so, but I sure can pray
mornin perris
hey what’s up?
If you could see the jammies, ratty bathrobe and slippers you might rethink that “chic” thing! *G*
g’morning smgumby!
good morning firedogs!
Iirc, there was a post over at the orange place just recently asking something similar; the answer with the most votes was (paraphrased) “a brief moment of sanity” but the voters expected it to pass. ;-)
Some writer from the NYT talking about the congressional debate on FISA now on Washington Journal.
I called my critter and left message saying did the right thing, need more of same and don’t let the the twit in the WH get away with anything.
I’ve been haunted by Lori Grinker’s report
(last night’s Bill Moyer’s)
anyone else see it?
“will they FINALLY begin proceedings against the criminals of our country and bring them to the bar of justice?”
In the upcoming debates, it would nice to see Sens. Clinton & Obama asked if the House of Bush will be held to account for any crimes committed during their occupation should either become president.
I had a ball yesterday calling the critters, they were very grateful for the call, they wanted to keep talking and talking about the showdown and what the immunity means to america
it was a good day
the way to frame the question is the most important part;
you start with a question to which they cannot say no;
“IF there have been crimes committed against our country, her constitution and the people of this nation by anyone in the adminsitration, will you bring them to the bar of justice or will they get away with their crime?”
OH BABY
we can even ask that from a republican and watch them DANCE AND DANCE AND DANCE
man that’s a good question
Marion, psy is the root of psyche = the soul, spirit, mind, the principle of mental and emotional life, … (Chambers dictionary), + chic [Fr] = stylish, smart, in good taste (Harper dictionary of Foreign Terms), put together, an apt description regardless of apparel. ¿No?
I haven’t seen it yet elliott, will click on that later at work
there is much more cost to this war then the money we’ve squandered and the loss of humaninty
in this country, there is a positive return on every life, each person contributes more to this country then they take, both socially and financially
the assets and income we have lost through this war cannot be measured
would love to see that!
out of juice. will talk to all on the next flight when it appears
later
The whole FISA thing was so bizarre because the old law allowed them to do their spooking on foreigners.
So all this retro immunity seems to be about money and jail time for some heavies and not a thing to do with “security”.
If you have a legal defense then present it a court and let a jury decide if you screwed up. They might find it patriotic blah blah blah… and give a pass or they may not.
Don’t you trust the people to make the right choices with their own safety… and privacy? Ha Bush?
This old broad says thanks!
¡el gusto es mio!
and old boards are the best, nowadays they aren’t put together like they once were ;-)
Christy is upstairs with Pull Up A Chair…
Marion In Savannah- Good morning. Here’s that St. Francisville LA gumbo recipe I promised the other evening:
Cornelia’s Gumbo Recipe
Ingredients
1 large frying chicken (needs to be dressed) including giblets & neck, 1-1/2 cups of flour for dredging, 1/2 tsp. cracked pepper, 1-1/2 lb. fresh okra, cut crosswise in ¼ inch rounds, 2 large beefsteak tomatoes if they’re proven tasty, otherwise 4 small tomatoes that taste like something chopped, 2 medium green bell peppers, chopped 1 large yellow onion, 1 very large garlic clove, diced, 3 tbsp. flour, unbleached, 3 qts. hot (not boiling) water, 3 large dried bay leaves, 1 lb. fresh shrimp, peeled and de-veined, 1 pint raw oysters and juice, 1 tbsp. file.
Hot brown rice.
(Other seafood can be substituted for the shrimp & oysters, but this flavor & texture combo is good)
Method
Dredge chicken in flour and pepper. In heavy skillet fry it until brown in enough peanut or canola oil to keep from sticking. Remove from skillet and set aside in large pot that has a lid. Reserve chicken oil to be used as needed in rest of cooking.
Combine okra, tomatoes, bell pepper, onion and garlic and fry in just enough chicken oil to prevent sticking. When almost done, put in pot with chicken.
Make a roux by combining 5 tbsp. of reserved chicken oil with 3 tbsp. flour in a large heavy skillet. Stir constantly over medium heat until roux turns dark brown. Be careful not to burn it! If you burn it, throw it out & start over. Nothing kills the flavor of gumbo like burned or scorched roux. Practice makes perfect. Gradually stir water into roux a little at a time. Add pepper and bay leaves and simmer about 5 minutes, stirring when necessary to prevent sticking. Pour over chicken and vegetable mixture, bring to a boil and simmer about 30 minutes.
Add shrimp and oysters & oyster juice to simmering mixture in pot and continue to cook about 15 minutes. Add file after gumbo has been removed from fire and has stopped bubbling. Do not boil after file has been added, as gumbo will be stringy. Many cooks put a bottle of file on the table and let guests add their own. (In case you are not familiar with file, it is made from dried sassafras leaves. A small bottle will last a long time.)
*Marie’s note- I’ve used saffron strands or ground cumin when I don’t have file- way different taste, but a good one.
Serve gumbo over hot brown rice in large flat-type soup bowls. Prepare rice while gumbo is cooking- we use brown rice for good flavor. Make some hot sauce available on the table, it adds to the file flavor. Salsa works well, too. This great recipe is from the sweetest woman in St. Francisville, Cornelia Devereux 1924-2007.
Thank you, thank you, thank you! It was so kind of you to remember this.
You’re very welcome. Interested in St. Francisville LA? It’s a sleepy little burg, w/the exception of this place. Been there quite a few times & it never ceases to strike me as genuinely odd. Not the buildings so much as the grounds:
The Myrtles
