It’s that time of year when Velveeta sales go through the roof, and cholesterol counts soar. It’s Superbowl party food time. By special request from several commenters: I thought we could spend some time talking party food and menus and appetizers and drinks and…well, everything there is to throwing the best damned superbowl party evah.
Or at least pick up some yummy new tidbit idea for a tasty little soiree for one or two…or fifty. And I’m hoping we can do a little better than some cubed Velveeta and a can of Rotel.
I’ve gone through several of my favorite recipes and will share a few in the comments — and I hope you’ll do the same. Or, in the alternative, if you have a particular fave frozen appetizer, easy to make dip, decadent dessert source, do share. One of my quick favorites is a block of cream cheese, softened, and topped with some hot pepper jelly and toasted chopped pecans. Serve with crackers and you have instant appetizer. Takes about 5 to 10 minutes, tops.

Best part about these sorts of recipes is that they also translate well to election night parties, voter education meetings, DFA soirees, Democratic women’s shindigs, after-canvassing thank you parties, candidate call days at the election headquarters…just about any gathering of folks where food and discussion works well together. I have a feeling this is going to be one of those threads we all bookmark for the days, weeks, and months ahead well into November.

Mexican Cheesecake dip
1/2 cup boiling water
2 tsp chicken bouillon
Three 8-ounce packages cream cheese, at room temperature
1 and 1/2 tsp chili powder
1 tsp taco sauce
2 large eggs
4 ounce can diced chiles, squeezed dry
salsa to top cheesecake
1- Preheat oven to 350°F. Spray 9-inch springform pan with cooking spray.
2- In a small bowl, mix water and bouillon.
3- In a large bowl, blend cream cheese, chili powder, and taco sauce until smooth. Add eggs and beat well. Blend in chicken bouillon mixture. Stir in chiles.
4- Pour mixture into prepared pan. Bake 30 minutes. Remove from oven and cool 15 minutes. Slide a knife around the edge of the pan and remove ring. Top with desired salsa. Can be served warm or at room temperature. Serve with tortilla chips or corn chips for dipping.
A devil’s food cake recipe with cocoa and fudge frosting.
INGREDIENTS:
3/4 cup unsweetened cocoa
1 1/3 cups granulated sugar
1 1/4 cups milk, scalded
2 cups cake flour, sifted or stirred before measuring
1 1/4 teaspoons baking soda
1 teaspoon salt
2/3 cup shortening
3 eggs
1 1/4 teaspoons vanilla extract
PREPARATION:
Grease two 9-inch layer cake pans and line bottoms with wax paper. Grease wax paper. Sift the cocoa with 1/3 cup sugar; pour into the milk gradually; stir until well blended. Set aside to cool. Sift together flour, remaining 1 cup sugar, soda, and salt.
Add shortening and half of the cooled cocoa and milk mixture. Beat at medium speed of an electric hand-held mixer. Add eggs, vanilla, and remaining cocoa and milk mixture. continue beating for about 2 minutes, scraping bowl with a spatula occasionally. Pour into prepared pans. Bake at 350° for 25 to 30 minutes. Cool in the pans for 5 minutes; turn out on racks and peel off paper. Cool and frost devil’s food cake as desired.

Bean Dip for Doritos:
2 cans of Refried Beans
1 large tub of Sour Cream
1 package of El Paso Taco Seasoning Mix
1 large package of Shredded Cheddar
This will be baked in a throw-away tin foil pan (if you hate to do dishes after a party like me) or a nice baking serving dish.
Line the bottom of the pan with refried beans. Sprinkle the El Paso seasoning mix on top and gently work into the beans. Next, layer the sour cream and last, but not least, spread all the cheese on top. Bake at 325 degrees for about 20 minutes. Serve with Doritos. Best dip, IMO.
Around here, a standard appetizer would be ring bologney and cheese

Thanks for the last paragraph about election parties, as I too have no desire to spend an afternoon watching armored men trot on and off the field for a few minutes at a time. Now, if it were the All Blacks playing rugby, count me in. They go in for the whole round and you can actually see who the player is without looking for a number. And there is nothing like watching Daniel Carter or Richie McCaw.
Anyway, someone was asking for a devil’s food cake recipe. You must try Nigella Lawson’s Guinness cake….it is chocolaty and rich and wonderful. I googled it and came up with this site that had the recipe:

And that includes watching sports that I participate in, like skiing.

VICKI’S SEAFOOD ENCHILADAS
1 lb. imitation crab
1/4 c. finely chopped onion
1 (8 oz.) sour cream
1/2 lb. shredded Cheddar cheese
1/2 lb. shredded Monterey Jack
8 to 10 flour tortillas
1 can enchilada sauce
Combine Cheddar and Monterey Jack cheese. Cut up crab into bite size pieces and add sour cream, onion and 3/4 of cheese. Brush each side of tortilla with enchilada sauce and place 2 spoonfuls of filling on an edge. Roll up and place seam down in a 13 x 9 baking dish. Top with remaining sauce and cheese. Bake at 350 degrees for 30 to 35 minutes.

The Super Bowl party is NOT @ my house this year, but my daughter & her fiance are hosting one. My sig other couldn’t care less about American football, so we’ll be going to a movie. My daughter’s idea of party food in general? Anything that goes well w/beer. These recipes from Abuelita’s Kitchen (a site I linked last Sat.) should fill that bill:
Ginette’s Authentic Guacamole -Recipe courtesy Ginette Rondeau
Ingredients:
3 ripe, medium size avocados
(I use ALL the ingredients, but the following MAY be considered optional…)
1/2 small finely chopped red onion (Or you can choose your favorite: yellow, white or green onions)
1 to 3 serrano chiles, stemmed, seeded and very finely chopped (If serranos are too hot for you, trying using Ortega roasted diced chiles, Tabasco Sauce or any other chile you enjoy.)
1 ripe medium tomato, cored, and finely chopped
8 sprigs cilantro (coriander), chopped
juice of ½ lime
salt about ½ teaspoon or to taste
Mexican queso fresco (Mexican cheese) sprinkled on top. No queso fresco available? Use any mild crumbly white cheese
Black Olives scattered on top too!
Cooking Directions:
Close to the time you are going to serve, halve the avocados lengthwise, remove the pits, and scrape the avocado pulp from the skins and add it to a medium-size bowl or molcajete (mortar).
Using a fork, roughly mash the avocado while mixing in the other ingredients, making a course, thick mass. Add the optional finely chopped onion, chiles, tomato, garlic, and cilantro. Flavor with salt, then lime juice. Return the pits to the guacamole (to prevent it from becoming dark).
Serve the guacamole dip in an attractive pottery bowl or Mexican molcajete. Sprinkle the dip with chopped onion, cilantro, radish, chile slices and/or queso fresco (cheese). You can also decorate your dip with a dab of sour cream in the center and add tortilla chips! Serve immediately.
Yield: About 3 cups, serving 6 as an appetizer, 12 to 16 as a dip
You can also use guacamole as a condiment for burritos, tacos, taquitos, fajitas, and much more!
Fresh Hot Tortilla Chips
Recipe courtesy Ginette Rondeau
Ingredients:
A package of Corn Tortillas
Vegetable Oil
Salt
Cooking Directions:
Heat 3 – 4 cups of Vegetable Oil until very hot. Cut tortillas diagonally into eight sections. Deep fry until golden brown. Take them out of the pot, drain off excess oil and sprinkle salt to taste. Serve them warm in a beautiful bowl.
Cacahuates
(Spicy Peanuts, 5 cups)
Recipe courtesy Estrellita Tapia Shawky
5 cupa salted, skinless peanuts
15 small red chilies (mild or hot)
3 cloves of garlic, pressed or minced
1/2 teaspoon onion powder
1/2 teaspoon chili powder
few drops of olive oil
salt to taste
In frying pan, heat chilies, garlic, onion powder, and chili powder for a minute or so, stirring occasionally. Add peanuts to coat with mixture. Preheat over to 300 degrees and spread peanuts on a cookie sheet. Sprinkle with a little salt. Bake peanuts for ten minutes, turn them over with spatula and bake for 5 more minutes or until slightly brown. Serve deliciously warm.

Satay Nuea
1 large sirloin steak
Meat Marinade
1/3 cup coconut milk
1/2 tbs of curry powder
1 tbs of sugar
2 tbs of cilantro leaves (coriander), chopped
2tbs of nam pla (fish sauce)
1/2 tbs of vegetable oil
Special equipment: bamboo skewers, soaked in water for two hours
Satay Sauce
1/2 cup of crunchy peanut butter
1/3 cup of coconut milk
1 tsp of roasted chili paste
2 tsp of red curry paste
1 tsp of palm sugar
1 tbs of chicken stock or water
Soak the skewers in water for two hours or for however long you marinate the meat for.
Cut the sirloin into thin strips and then place them into a medium-sized bowl with the marinade mixture. Coat the meat well. Cover and refrigerate for 2 hours.
Meanwhile, make the satay sauce. Add the peanut butter to a small pot over a medium heat. Stir until the peanut butter melts. Add the roasted chili and red curry pastes. Stir well.
Add the coconut milk to the pot and keep stirring. Turn heat down slightly and then add the palm sugar. Keep stirring.
Once the sauce thickens add the chicken stock or water and stir well. Turn the heat off and set the pot aside.
Start to skewer the meat strips. Shake free any coriander that might be stuck to the meat.
Heat up 1/2 tbs of vegetable oil in a griddle or fry pan over a medium high heat.
Add the skewers to the pan and cook for 4-5 minutes on each side. If the meat is turning a little black around the edges, turn the heat down slightly and cover the pan to allow the meat to steam a little. You can also spoon a little of the marinade over the cooking meat.
Meanwhile, when you are on to cooking your last few skewers, return the satay sauce pot to the stove and heat it up. Stir the sauce well and then serve in a small bowl.
Prepare the cucumber and shallots by peeling and cutting them. Arrange on the serving plate.
Serve satay with a cold glass of beer.

Over the holidays I experienced an appetizer called Buffalo Chicken Wing Dip (or something close.) It looked like a welsh rarebit when it was put out, but it’s made with shredded chicken, and I do believe there’s ranch dressing in there and I’m not sure of the cheese, but tasted like buffalo chicken wings. Need tortilla chips to eat it.

For the cake:
1 cup Guinness
1 stick plus 2 two tablespoons unsalted butter
3/4 cup unsweetened cocoa
2 cups superfine sugar
3/4 cup sour cream
2 eggs
1 tablespoon pure vanilla extract
2 cups all-purpose flour
2-1/2 tsp. baking soda
For the topping:
8 oz. cream cheese, at room temperature
1-1/4 cups confectioners’ sugar
1/2 cup heavy cream.
Preheat oven to 350 degrees F and butter and line a 9-inch springform pan. Pour the Guinness into a large wide saucepan, add the butter – in spoons or slices – and heat until the butter is melted, at which time you should whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and then pour into the brown, buttery, beery pan and finally whisk in the flour and baking soda.
Pour the cake batter into the greased and lined pan and bake for 45 minutes to an hour. Leave to cool completely in the pan on a cooling rack, as it is quite a damp cake.
When the cake’s cold, sit it on a flat platter or cake stand and get on with the frosting. Lightly whip the cream cheese until smooth, sift over the confectioner’s sugar and then beat them both together. Or do this in a processor, putting the unsifted confectioner’s sugar in first and blitz to remove lumps before adding the cheese.

How about a creamy asparagus dip?
Ingredients
9 oz. cream cheese
1 lb. can asparagus spears, drained
2 Tbsps. dill, chopped
1 large cucumber, roughly chopped
Instructions
Place all ingredients in a food processor. Season with salt and pepper
to taste. Process until thoroughly combined. Serve with crackers or corn chips.
Croissant Sticky Buns!!!!!! The bakery has come to their senses and they have had them 2 weeks in a row.

There is a place in Fort Lauderdale called Chez Porky’s that has some of the best wings around. They serve Raspberry Wings and they are dynamite.
IT looks great..but i have to use my overipe Bananas today,so
Ingredients:
4 oz.margarine or butter
1+1/4 cup brown or white sugar
2 eggs
2 cups flour
1+1/2 tsp. baking powder
1/2 tsp. baking soda
1 cup or 3 bananas – mashed
2 to 3 tablespoons sour cream
1 cup pecan or walnuts
a few more nuts to decorate
Method:
1. Heat oven: 300 deg.
2. Grease either a large loaf tin or an 8″ by 11″ baking tin.
3. Beat margarine and sugar till fluffy white.
4. Beat in the eggs.
5. Mix flour, B.P and B.S. together. Add to the above mixture.
6. Add bananas and sour cream. Blend in gently.
7. Fold in the nuts.
8. Pour into the baking tin and bake for 60/70 mins.
9. Let the loaf cool well before slicing. Don’t forget to decorate with some
nuts.
Beer Cheese Super Bowl Cupcake Recipe
1 cup beer (mmmmm.. beeeerrrrr…)
1 stick, plus 1 tb, unsalted butter
1 cup grated cheddar (Get something nice and sharp, not the cheap stuff that comes shredded in a bag.)
2 cups dark brown sugar
3/4 cup sour cream
2 eggs
1 tb vanilla extract
2 cups flour
2 1/2 tsp baking soda
Combine the beer and the butter, chopped into 1-inch chunks, in a large sauce pan, and heat to melt the butter. Add cheddar. Remove from heat, and whisk in the sugar. In a bowl, whisk the sour cream with the eggs and vanilla, then add to the beer mixture. Sift together the flour and baking soda, and fold into the batter. Pour into cupcake wrappers and bake for 25 minutes, or until inserted cake tester comes out clean.
Makes 18 cupcakes.
Bacon Cheddar Cream Cheese Frosting Recipe
1 8oz package cream cheese
1/4 cup butter
4 cups powdered sugar
3/4 cup grated cheddar
1 cup crumbled bacon
Make sure cream cheese and butter are are room temperature and beat them until creamy. Add grated cheddar. Slowly mix in powdered sugar. Stir in bacon bits.

I’m not much of a cook, but clumps of vegetables fried in tempura batter make good snacks. Although all the recipes refer to fresh vegitables, I actually think canned vegetables, like green beans, are more tasty.

Good morning everyone. I was hoping for a recipe PUAC. I’m going to my sister’s for the game and would love to bring something new and different. My contribution is usually a veggie platter. Nothing unique but still everyone’s favorite.
My real contribution this year is that I bought a NY Giant’s cheerleading dress for the only little one we have in the family. Shhhhh. No one knows yet, it’s a surprise.
That looks to have the 3/4 major food groups: alcohol, cholesterol, and sugar. Only caffein is missing, but we could wait for the next morning for that.
If you mention “brie” to many tough-guy Super Bowl watchers, they’ll laugh and say “pass the Shar-do-nay”. Tell them you’ve got a new cheese and chili powder recipie, though, and they’ll be all over it.
Chili Brie in Sourdough
Take a round 1 lb loaf of sourdough bread, cut a round hole in the top and carefully remove it, saving the top. Pull out enough of the inside of the loaf to make a bowl, saving the pieces.
Mix together 1/2 tsp sugar, 1/2 tsp garlic powder, 1/2 tsp dry mustard, and 1 tsp chili powder.
Butter the inside of the bread bowl, and sprinkle 2 tsp of the spice mix inside. With a knife, make 2 inch deep cuts all the way around the top of the bread bowl, about one inch apart.
Take an 8 oz round of brie, remove the rind, place it inside the bread bowl, and sprinkle on the rest of the spices.
Replace the top, and bake on a baking sheet for 20-30 minutes. To serve, take the top off the bread, break it into pieces, and dip in the cheese. When the top is gone, use the reserved pieces from the inside of the loaf. When those are gone, pull apart the bowl itself (that’s why you made those slices in the bowl to begin with) and eat until it’s gone.
Best of all, it goes well with both Chardonnay and beer.

I sent the link to my hunter friend, suggesting it for next hunting season. I asked him why crows caw so much (very annoying sometimes when I’m working outdoors), and he says they have quite a variety of forms of communication. Never tried to track down a CD that explains it all though.

Cheeses squares. Very easy. Always a big hit:
1 pound cheddar, grated
1 pound monterey jack, grated
4 cans chopped green chilies (choose your own hot level)
12 eggs
Whip eggs; blend in cheeses
Grease (ugh — it’s an old recipe) 2 large pans (glass best) and spread chilies on bottom. Spread egg/cheese mixture over chilies.
Bake at 350 for 30 minutes and then 250 for an additional 30 minutes.
Serve warm. Yum!

Super Bowl Brownies from my favorite cookbook, California Bistro by Tony DiLembo. Cut them small, best brownies ever:
1 cup all purpose flour
1/2 tsp salt
3/4 cup powdered cocoa
2 cups (1 pound) unsalted butter softened
3 cups sugar
3 eggs
2 tbsp vanilla extract
1 1/2 cups chopped pecans
Preheat oven to 350. Line a 16 x 10 pan with aluminum foil including the sides, about 2 inches high on the edges at least because the brownies rise when cooking.
Sift the flour, salt and cocoa together. Cream the butter and sugar until light and fluffy. Turn beater to low and add eggs one at a time. Add vanilla.
Remove the mixing bowl, and add the dry ingredients all at once. Mix together with a spatula until barely moistened. Add pecans and mix, being sure to scrape down the sides of the bowl.
Pour into pan, smooth top. Bake 23 to 28 minutes until just set. Allow to cool, then place in refrigerator until firm.
Makes 24 large brownies.
When we first moved into our house in a new incomplete neighborhood, there were two crows, each about 2′tall, who would strut slowly down the center of the street every morning cawing loudly. They each walked like John Wayne slinging open a saloon door. Later, the GW and many of the administration reminded me of the two big loudmouth crows.

I’m getting hooked on a lind from the site that I got the Guinness recipe from. I followed it because of the title, A chicken in every granny cart (http://achickenineverygrannycart.wordpress.com/). There is a fascinating account of a ten mile walk on Bedford Avenue in Brooklyn with gorgeous pictures and a map link (with comments). It is a grand example of paying attention and being alive to the place you are. I recommend the photos at the very minimum, but it also has recipes!

Yeah, I think they are a nuisance to farmers. They are very wary with good eyesight and normally won’t come near anyone with a gun. So it’s sport for some hunters to try to lure them close enough to shoot at. I don’t think anyone actually bakes twelve and twenty of them into pies anymore.

Key Lime Parfaits
3 Tbsp unsalted butter
3 Tbsp sugar
1/2 cup graham cracker crumbs
1 14 oz can sweetened condensed milk
1/2 cup fresh lime juice
at least 1 Tbsp lime zest (grated lime peel) [more = greener]
1 cup chilled whipping cream
Melt butter in a small skillet over medium heat. Mix in sugar and stir until bubbling, about one minute or so. Mix in crumbs, and stir until the color deepens, about three minutes or so. Remove from heat and dump out on a plate to cool.
In a separate bowl, stir together condensed milk, lime juice, and lime zest to blend them together (the mixture will thicken). In another bowl, beat the cream with an electric mixer until firm peaks form. Fold the whipped cream into the lime mixture.
Get out 8 to 10 wine glasses, and put a scoop of the lime and whipped cream mixture in the bottom of each one — about 1/4 cup. Top with a layer of the graham cracker crumb mixture, about 1 Tbsp each. Add another layer of lime mousse and the rest of the crumbs. Refrigerate for at least an hour, then serve.
(If making them the day before, cover each glass with plastic wrap.)
Not superior, just different taste in watching people perform.

In BIG pot…if you are using a crock pot,,,HEAT THE CROCK POT FIRST and THEN add heated ingredients
saute onion in olive till soft. Add peppers…cook with onions Add all spices.Then dump in beans,tvp,and tomatoes and cooked mushrooms if using Cook for about 45 minutes..I like chili thick…but you may want to add more tomatoes..
For my daughter who is vegan she adds soy cheese. For me I use regular cheese

My favorite frozen junk food appetizer is Jalepeño Poppers. Small jalepeño peppers, stuffed with cream cheese, breaded and deep fried. They are addictive. Serve with sour cream and salsa, or for a real sugar high, there’s a sweet raspberry habeño sauce that Costco sells.

Yummmm. It’s so nice to find bags of real *key* limes in the stores these days. The little suckers are mean to juice but well worth the effort. Fortunately, I have my mother’s old red Juicematic (?), do a whole batch at the same time and freeze the juice in measured quantities.
If it’s meaty rather than heavy, it works!

Sounds excellent, Lee. Here’s another great veg. chili recipe. The meat’s gone, & you’ll never miss it. Very hearty:
Vegetarian Chipotle Chili
Ingredients:
¼ cup olive oil
1 ½ cups onion, diced
4 cloves garlic, minced
2 tsp cumin
½ tsp red pepper flakes
½ tsp black pepper
2 tsp chipotle chili powder
2 tbsp tomato paste
4 large carrots, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
3 stalks celery, diced
1 28-oz can whole peeled tomatoes, drained, chopped
2 cups tomato juice
2 15-oz cans kidney beans, drained
1 15-oz can pinto beans, drained
1 small eggplant, peeled & diced
4-5 large portobello mushroom caps, cubed
2 tbsp Chipotle Tabasco sauce
salt to taste
Garnish:
16 oz. sour cream
2 tbsp. Chipotle Tabasco sauce
8 oz. shredded sharp cheddar cheese
Directions:
Heat oil in large heavy pot over high heat. Add onions garlic, cumin pepper flakes and black pepper. Sauté until onions are transparent. Stir in chili powder and tomato paste. Sauté for 30 seconds then stir in celery, carrots and peppers. Cook and stir for 2-3 minutes. Stir in tomatoes, tomato juice, beans, eggplant, & bellos. Bring the mixture to a boil. Reduce heat and simmer for 30 minutes. Stir in the Chipotle Tabasco sauce and season to taste.
To make garnish:
Stir together the Chipotle Tabasco sauce and sour cream. Top each bowl of chili with a spoonful of the sour cream/Tabasco mixture and then sprinkle with cheese. Feeds a crowd.
Toffee Brownies
1 package brownie mix with walnuts
Vegetable cooking spray
3 (6-oz) candy bars with almonds and toffee chips (eg. Symphony)
Prepare the brownie mix according to package directions.
Line a 13 x 9 inch cake pan with aluminum foil and spray with oil. Spoon half of the brownie batter and smooth with a spatula or the back of a spoon. Place the candy bars side by side on top of the batter. Cover with the remaining batter.
Bake according to package directions. Let cool completely, then lift from the pan using the edges of the foil. Cut into squares.
Makes 24 large/48 small brownies.
For the first time in years, I had to buy a lime in the store. Back in CA, we had a lime tree in the back yard, and it always seemed to have a ripe lime or two when I needed one. Of course, when I didn’t need one, the tree usually had fifty or sixty ripe ones. We’d juice a bunch of them all at once, and freeze the juice in appropriate quantities.
Now, there no lime tree peeking out of the snow in our yard in KC. Something about the below zero weather last week probably would not be good for them. I think you’re supposed to juice them first, then freeze them — not the other way around.
But 79 cents for a single lime?!?! Grrrr . . .

I noticed something interesting on this. I got info/requests from John Kerry from 2004 through the time that Kerry dropped out of the current campaign. Then I started getting requests from Barrack Obama, no one else. Ultimately, Kerry endorsed Obama.

I found the Buffalo Chicken Dip recipe
ingredients:
* 2 (10 ounce) cans chunk chicken, drained
* 2 (8 ounce) packages cream cheese, softened
* 1 cup Ranch dressing
* 3/4 cup pepper sauce, such as Franks® Red Hot®
* 1 1/2 cups shredded Cheddar cheese
*
* 1 bunch celery, cleaned and cut into 4 inch pieces
* 1 (8 ounce) box chicken-flavored crackers
directions:
1. Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.
–There’s a converter button there for the American way of measuring things versus the infinitely more efficient Metric system.
I will note that it is hugely embarrassing that we can’t handle the metric system here in America

Morning all. Mr. ReddHedd got up with The Peanut so that momma could have a sleep in this morning. Yay! Lots of good recipes in the thread, thanks much for that. I thought everyone would enjoy a no politics (mostly) and lots of sharing of munchies and fun sorta thread — apologies to everyone who got stuck on the “football, I hate football” aspect, I was intending it to be a camraderie sort of thread because, frankly, the comments have been a bit snippy of late and even I needed a break.
Reuben Dip
1/2 lb corned beef, chopped
1 8oz pckg cream cheese
1 small bottle thousand Island dressing
1/4 cup mustard
2 cups shredded swiss cheese (reserve 1/2 cup)
1 cup sauerkraut
Mix all ingredients except reserved cheese. Pour into small baking dish. Back for 20 minutes at 350 or until dip is bubbly at the edges. Top with cheese. Serve with rye crackers. Low fat version can be made with lowfat cream cheese and Jarlsburg or low fat swiss. Tastes just as good. addicting
My sister sometimes puts this in a small crock pot to keep it warm and fluid.
Here’s another easy, easy one. Into a small crock pot add smoked sausage chopped into chunks and a large bottle of hot pepper mix. (Usually in the pickle aisle.) Warm the sucker up and use toothpicks to serve.
Pineapple Salsa
1 ripe pineapple, chopped small
1 large red onion, chopped
1 jar pickled jalapeno peppers, chopped
1 cup chopped fresh mint
Combine all ingredients. Chill for a an hour. Serve with tortilla chips.

I was voted off the DailyKos island a couple of weeks ago because I lost my patience after several months of the Obamagasm. Kos said he’d turn on my priveleges after the primary but, you know, I’m not in a hurry to go back. Something weird is happening at DailyKos. It seems like the entire site was unofficially dedicated to Obama this primary. The Hillary contingent is definitely there but they’re afraid to open their mouths lest they get creamed. Only a few brave souls venture out. And if you’re not an Obamaphile, you’re definitely not welcome anymore.
Somehow, that’s not what I thought DailyKos was about when I started posting there. I didn’t think that the site would be mobilized with one goal in mind: Get Obama Elected Or Die Trying! It’s weird. I went to 2 YearlyKos conventions and my orange lanyard, complete with Lamont and FDL buttons still swings from my rearview mirror. But I’m not in the tribe anymore.
Anyway, I’m off to volunteer at Hillary’s headquarters in Trenton, NJ today and tomorrow.

Here is a funky recipe from the sixties that sounds awful but always seems to be a big hit. This works well in a small crock pot and you can double or triple it for a big crowd. It’s pretty cheap too and can sit for hours in the crock pot with no damage.
1 small jar of yellow mustard
1 small jar grape jelly
1 package of “Little Smokies” Cocktail Franks or regular cocktail franks
Mix the jelly and mustard in a sauce pan and heat until it is all mixed and hot. Mix in the franks and keep warm. Serve with toothpicks.

Late to the party, but I did bring something to munch on. And yes, it does use Velveeta, why do you ask? *g*
Hot Cheese Dip
1 # ground beef
1 Lg onion, chopped
1 – 16oz can stewed tomatoes (drained) or same of diced tomatoes
2 – 4oz can chopped green chilies
2 # Velveeta
Seasonings: Chili powder, chopped garlic, hot sauce and Tabasco sauce to taste.
Saute ground beef and onions. Drain.
Add stewed tomatoes and green chilies.
Add the above to a microwaveable container.
Cut cheese in square inch size pieces and add to the mixture.
Add the seasonings.
Place the container in the microwave and heat. I usually run it for 1 minute at at time at High and then take it out to stir the mixture. Continue to heat until the cheese is thoroughly melted.
Keep warm in a crockpot on low heat.
Serve with tortilla chips.
Lastly, I usually downsize the ingredients for this recipe in 1/2 for the meat eaters. The other half I make with no ground beef and that seems to please the veggies in my family just fine. *g*

well, you know the campaigns go over the disclosures with a fine tooth comb, so maybe it’s a good thing that there’s public “sunshine” on who’s giving where. If nothing else, it’ll help me decided next time I’m in the store pickin’ out a DVD or a grocery brand or….
Some favorites:
Guacamole from Craig Claiborne’s Gourmet Diet
1 large, ripe, unblemished avocado
3 tsp finely chopped onion
1 tsp finely grated onion
1 tsp finely minced garlic
1/2 tsp chopped jalapeno chile
2 T lime juice
1/2 tsp crushed coriander seeds
1/4 c. cubed, seeded, fresh tomato
1 T olive oil [optional]
1 red radish, cut into thin matchsticks
1 T chopped fresh cilantro or fresh basil [use one, not both]
1. Peel the avocado and discard the pit. Cut the avocado into 1-inch cubes.
2. Put the avocado into a bowl and cut it back and forth with a knife, to make a coarse-fine mixture.
3. Add the onion, garlic, chile, lime juice, coriander seeds, tomato, and the radish. Use either the cilantro or the basil.
Sun-Dried Tomato Spread or Dip
adapted from Barbara Kafka’s Party Food
24 to 30 sun-dried tomato halves (dry packed, not in oil)
1 c boiling water
1 clove garlic
2 to 3 T chopped parsley
10 oz cannellini beans
2 T extra virgin olive oil
1 tsp lemon juice
1. Rehydrate sun-dried tomato halves, by soaking in boiling water for 10 minutes. Remove from water and pat dry with paper towels. Discard soaking water, or save for vegetable soup.
2. Put garlic in bowl of food processor and mince. Add sun-dried tomatoes, parsley, cannellini beans, olive oil, and lemon juice. Process until smooth.
To serve: spread on crackers, toasted slices of Italian or French bread, raw zucchini slices, or use as a dip with bread sticks and crudités.
And for dessert, the.best.brownies.ever.
Michael’s Fudge Brownies
from Alice Medrich’s Chocolate and the Art of Low-Fat Desserts
makes 16 two-inch brownies
1 cup sifted all-purpose flour
1/2 cup plus 1/2 tablespoon unsweetened Dutch process cocoa
[try Pernigotti cocoa, available at Williams-Sonoma stores or through catalog]
1/4 tsp salt
1/4 tsp baking powder
5 T butter or stick margarine
1-1/4 c sugar
1 egg
2 egg whites
1 tsp vanilla extract [use pure vanilla for best flavor]
1 tsp instant espresso, dissolved in 1 tsp hot water
1. Position the rack in the lower third of the oven and preheat to 350° F [325° F if using a glass pan]. Spray 8-inch square pan with vegetable oil spray.
2. Stir together flour, cocoa, salt, and baking powder with a whisk. Set aside.
3. Melt the butter in a medium saucepan. Off the heat, stir in the sugar until combined [texture will remain sandy]. Add the egg, the egg whites, vanilla, and dissolved espresso powder. Beat with a wooden spoon about 40 strokes, scraping the sides of the pan as necessary. Add the dry ingredients and beat for another 40 strokes or just until completely mixed.
4. Scrape mixture into prepared pan. Spread evenly. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out a little gooey. Cool on a wire rack. Cut into 16 squares.
Brownies may be stored, well wrapped, for about two days at room temperature or frozen for up to two months.

Two of the three places I have lived most of my life.
I got back from the butcher, a nice flank stuffing for dinner tonight, goat and fontania cheese with fresh thyme and toasted breadcrumbs for the stuffing. Rice pilaf and a nice green salad.
Now to clean the house for company.

The other place I’ve lived is Buffalo. A couple of years ago I went to a Bills-Jets game in Buffalo, as my late brother was a Bills season ticket holder & my son is a Jets fan. Jets got creamed, and I never heard the end of it from one of my high school classmates.

LOL. I actually did see one ambulatory once. I was waiting for a bus and at a distance I see this thing waddling down the sidewalk. I thought it was a racoon or something and when it got closer i said “Holy shit! It’s a fucking armadillo!” First time I saw one. Never had ‘em up in Jersey. It waddled down into a drainage pipe. I told everybody at work my amazing story and they were far less amazed than I. All that time, I thought all that road kill I’d been seeing were racoons and dogs. I didn’t know we had armadillos all over the place.

Did you participate in the FDL Book salon on Creating a World Without Poverty? I read that with my economist hat on, though that is far from my area of expertise. I couldn’t find any fundamental flaws, and it really seems to work. All 8 customer reviews on amazon give 5 stars. (On any book I like, I read the negative reviews first to see if there’s some flaw that I missed.)

Here’s my recipe for a very easy spinach and artichoke dip.
1 pkg. TGI Friday’s frozen spinach and artichoke dip
Heat in microwave through the first level of instructions. Scrape into larger microwave-safe serving dish. Add one 8 oz. block cream cheese, cut into slices. Open and drain a can of artichoke heart quarters in water, and chop into smaller, bite-sized pieces. Stir into dish. Heat in microwave 2 and a half minues on HIGH. Stir well, making sure to scrape down sides completely. I add some shredded cheddar cheese — about a quarter cup — and reheat about a minute and a half, or until bubbly. Serve with crackers or sliced baguette.
Easy and quite nummy. And if I use lowfat cream cheese, I like to delude myself that it’s slightly healthier.
So, since Brownbach dropped out before the primary was even over would the lady in my neighborhood have to be reimbursed for anything she gave over $2,300? Also, can you designate funds for primary or general?
No, I’m not a Jets fan, nor a fan of any sports team. It’s my son who’s a Jets fan, and he moved to Austin last Thanksgiving, so I’m not sure on where he stands now. As for the stadium, you’d have to ask someone else to make sure, but I think local opinion put a kaibosh on it.
That is so cool. When you grow up min the not-wilderness, it’s so cool to see real live wildlife. I still get a kick out of it. It amazes me.

On onion rolls slathered with garlic mustard pile up sliced roast beef, interspersed with blue cheese and cornichons. (Feeling fancy add some carmalized red onion). Mash (I lived in the south for awhile too) the lid down so flavors meld.

Most of the time yes. I lived for a couple of years in Lafayette, Louisiana. Some of the guys I worked with would go water skying in the bayous. Each time before the boat would raise them out of the water, alligators would start edging in off the banks. I never went with them.
Yeah, I didn’t point that out to him. It’s basically a 20-something thing. As I understand it, UT graduates love it & hang on, which creates a critical mass, attracting other 20-somethings. He also likes the music scene, has a cousin & a college friend who live there.

Yeah, that exactly describes my understanding. There are a lot of UT grads still doing waiter, waitress thing because they don’t want to leave Austin. I talked to one, who was from California. He said he loved it; it was the closest thing to California he had found.
At the store — in the frozen section. I like that particular brand because they use roasted garlic, and the taste with the added cream cheese comes out perfect. The dip by itself just isn’t right for my taste, but once you doctor it up a bit…very tasty. And it’s good reheated the next day for a snack, too. *g*
No idea. I just know that the cap is good for both sides of the election. I don’t believe funds can be converted to personal use anymore but believe they can be converted to use for his Senate campaign or for a PAC or can be donated to others PACs.

Might I suggest if you’re drinking beer, do it out of a can. There’s no reason to waste a good brew on the SB. And no can-to-glass–you’ve got to get a taste of the game in the aluminum. Go cheap and tinny, like the game itself (and hey, I say that as an inveterate fan of football).
1lb can of crab claw meat
1 pack. low fat cream cheese
small low fat sour cream
1 jar creamy horseradish sauce
lemon juice
chipotle powder
Garlic powdwe
Put cream cheese in a large bowel in microwave till soft. Add about half the cup of sour cream, as much as you want or can take of the horseradish, a squeeze of lemon juice, garlic powder and depending on your level of testosterone hit it with the chipotle powder. Mix well. Open crab claw meat and drain, check for shell, break up and add to gloppy mix. MIX! Garnish with paprika and pickled halapenio slices and such. I like Blue Corn chips.
EAT!!
P.S. it is pretty good if you drain and pat dry a SMALL can of diced tomatoes and green chiles.

Small crowd, including my sis who has been having eye problems and owns a tiny tv (ours is big screen- she can see the advertisements).

As to the game, I don’t have a dog in that fight but will enjoy the action.
My new favorite dip is Corn Dip
Combine the following:
8 oz cream cheese
8 oz sour cream
1 big tablespoon mayonnaise
1 can Mexicorn
1 can corn
1 can chopped green chiles
4 oz shredded Mexicheese
handful of finely chopped jalapenos
jalapeno juice to taste (I use about a tablespoon)
Lawry’s season salt to taste
Make this delicious dip about 12-24 hrs ahead of time. The first time I made it, I kept tasting it every few hours to “check out” the hotness factor. It was so good, I ended up having to make another dip to supplement the first one as half of it was gone. I have some in the basement frige now which I selected to make me NOT taste it so often.
Got to pull for my Jayhawks this afternoon.
p.s. I use low fat cream cheese, sour cream and mayo without effecting the taste.
Hmm! Interesting…seems that there was a natural selection process going on that perhaps should be analyzed.
Similar comments were made regarding Huffingtonpost being a Hillary site, and this site being an Edwards site. Id say 90% of the folks here were Edwardians, which made it hard to actually discuss the diversity of progressive political opinion at times, IMO.
