Instaed of cutting the eggplant the short way, cut it the long way and fry. Once fried, lay each one out on a plate, and in the center add ricotta & mozzerella cheese, a little sauce and a slice of sausage and roll each side over and put a toothpick in it. Add them all to a baking dish like this. I always add a lot of cheese & sauce to the top also.

Salt it and drain it first, then do all the above.

Flour, egg and bread (seasoned crumbs with cheese, too), then fry . . .

And that’s a KILLER and simple recipe, good stuff!!
