
Happy Birthday, Jesus. It’s your day, so I looked up some of the really good things you said, just to remind folks why today is important.
“Blessed are those who mourn for they will be comforted” (Matthew 5:4) [We made a lot of people mourn this year, but we've been a little slow on the comforting part.]“Blessed are the meek for they will inherit the earth” (Matthew 5:5) [I think these people understand this.]
“Blessed are the merciful, for they shall obtain mercy” (Matthew 5:7) [We kinda forgot about that when we rounded up a few hundred families before Christmans and put them in what were little more than concentration camps]
“Blessed are the pure in heart, for they will see God.” (Matthew 5:8) [Yeah, people like this.]
“Blessed are the peacemakers, for they will be called children of God” (Matthew 5:9) A few people understand this; others not so much.]
“Blessed are those who are persecuted for righteousness sake, for theirs is the Kingdom of Heaven” (Matthew 5:10) [We should start looking into that.]
43 “You have heard that it was said, ‘You shall love your neighbor and hate your enemy.’ 44 But I say to you, Love your enemies and pray for those who persecute you, 45 so that you may be sons of your Father who is in heaven. For he makes his sun rise on the evil and on the good, and sends rain on the just and on the unjust. (Matthew 5:43-45) [We now use video war games to get ready for more real war, even though we know it's just crazy.]
"It is easier for a camel to go through the eye of a needle, than for a rich man to enter into the kingdom of God." (Matthew 19:24) [I hope this is true.]
And Jesus entered the temple and drove out all those who were buying and selling in the temple, and overturned the tables of the money changers and the seats of those who were selling doves. [We promise to start checking into that sort of thing, starting next year.]
And He said to them, "It is written, 'MY HOUSE SHALL BE CALLED A HOUSE OF PRAYER'; but you are making it a ROBBERS' DEN." (Matthew 21:12-13) [They turned everything into a robbers' den.]
“Woe to you, scribes and Pharisees, hypocrites! For you tithe mint and dill and cumin, and have neglected the weightier matters of the law: justice and mercy and faithfulness. These you ought to have done, without neglecting the others." Matthew 23:23 [Guess we didn't pay much attention to that one.]
"Truly, I say to you, as you did it to one of the least of these my brothers and sisters, you did it to me. . . . Truly, I say to you, as you did not do it to one of the least of these, you did not do it to me." Matthew 25: 40, 45) [There's probably a whole archive of stories on how we're not doing too well on that one.
Lately a lot of Christianists have been saying and doing things that don't sound like you. Some recent examples:

Last night, at RevDeb's Christmas Eve service, they sang It Came upon a Midnight Clear, by Edward Hamilton Sears, including the third verse:

I'm sorry this last year was so bad, and I'm especially sorry about all the Christianist wingnuts. You don't deserve all the mean and thoughtless stuff they say and do in your name. Seems they just got screwed up along the way and missed your point.
You were a good person who actually cared about people; you minstered to the poor and the sick, and you fed the hungry. You forgave your enemies, even those who falsely used your name. So Happy Birthday, Jesus. We promise to try harder next year, and that’s our gift. Hope you like it.

Today we served
Salmon poached in Chardonnay and brine (salt water) with a pinch of tarragon
Spaghetti Carbonara
I now use DeCecco pasta - BC (before child) I mad my own fresh first thing in the AM
Sauce is Heavy Cream, Butter, Fresh grated Parmesan (or the softer Romano if you are lazy) fresh garlic to taste (my taste is lots) bacon, onions and eggs
crisp the bacon then saute the onions in some bacon grease, crumble the bacon to your liking (min is about 1/2 to 1 inch pieces)
set aside
cook the pasta (al dente)
heat the cream and butter, adding the garlic as it heats.
when the cream is good and hot add the eggs and whisk vigorously with a wire whip
add the cheese while continuously whisking to keep the texture smooth
if you have a partner, now os a good time for them to drain the spaghetti and dump it back into th pot, if flying solo, you should have done this before the cream got hot
When the cheese is melted and the sauce is smooth (real smooth), dump it over the pasta and toss in the onions and bacon
serve immediately
we also had a little leg of lamb with mint jelly (and new this year, guava jam) on the side
Also new this yeat, we had Trader Joe’s wasabi mayonnaise on the side for the salmon

Agreed, find it hard to practice each and everyone with BushCo and the ReThug crowd. How can I be merciful when I wish they suffer what they wrought at GITMO and elsewhere.
It was easy to mourn, I actually could not talk to Cindy Sheehan when I met her, all I could do is cry and have her tell me that she understood, one mother to another.

In looking through materials for this post, I read through stories about the efforts to turn the Air Force Academy and the Pentagon into evangelical recruitment grounds and another story I saw in the Globe about how the Bush faith-based program was funding Christianists to provide improved conditions for prison inmates — provided they converted. Otherwise, repressive conditions remained. It makes you wonder about what goes through their heads.

And for all my bitching, the feeding tube is a wondrous thing. I’ve lost maybe 12 pounds in seven weeks and kept a lot of my my stregth. That’s really good, they tell me. It’s like anything else—one measure of yourself is in how you adapt to the challenge you face.

The Bible is pretty clear about providing food and drink and material needs of all kinds regardless of what people believe.
Help people first, treat them with love, and maybe eventually they will want to know why we are like this. Then they might be open to hearing about spiritual matters.
Even the prophet Elisha was given similar advice when he was depressed. The angel came to him and said basically, Eat, drink, we’ll talk in the morning [egr translation].
The hijacking of Christian beliefs by the current administration to favor those who support them…well, hate is bad for the soul so I’ll just say we need to make a change.
And war is bad for the soul, creates hatred in the heart and destruction of all kinds. We have got to get a grip, as a nation.

Patrick 4/4- have you tried the recipe for Daube de Boeuf from “Mastering the Art of French Cooking”? No good online link. You have to find the cookbook. This is my traditional dish for NYE, and like your recipe, it is necessary to follow it to the letter. I don’t know why that is, but it is. It is the only thing that I will take that much time to prepare.
And, for those turkey leftovers (some folks do have Christmas turkey), I have another “best”, but it is really a long recipe (short prep tho): Pulled and Deviled Turkey. I will email you with it, if you want to know.

Patrick 4/4, I hope your wife doesn’t feel the need to look over your shoulder while you are cooking. For a non-cook (I count myself as that) what is needed is time and space to enjoy. I have a good friend who is a life-time cook/ obsessive, and I nearly duked him when he got on my case about the fact that I was not boiling eggs correctly. A recent vacation together ended badly, in part because of the “cooking issue”. I trust you have not suffered similar- indeed, if you had, I can’t imagine that you would still be in the kitchen!

Speaking of turkey, I actually cooked turkey breast last night for the first time. It came out beautifully. Served with a truly delicious mango sauce which complimented the turkey wonderfully. I’m going to try the mango sauce on everything now, fish, chicken, roast beef (:-).
montag- that egg episode shows how things can go wrong with food freaks. My HB eggs = put the eggs in cold water, and turn heat to boil for 14 min. I think I learned that from “The Joy of Cooking”… but, oh, no, one has to pierce the eggs with a pin, and then gently lower them into boiling water for X ? minutes. Same guy who asked me where the car keys were- I said “in my pocket”- he said “let me have them, I’ll be less likely to lose them”- I have (had) been friends with this man for 35 years, and really was totally baffled as to what was going on!!!!!

Don’t know what you’re using for a mango sauce, but, next time you get creative, try making the mango sauce with a whole mango and maybe an eighth of a habanero.

Piercing them with a pin just sometimes avoids the possibility of the shells cracking. If the shell cracks, the white near the surface of the crack gets a tiny bit harder than normal.

Okay, now that it’s the end of the thread, I will post the pulled and deviled turkey recipe for Persiflage and Patrick 4/4. I didn’t want to post it before, bec. it’s really long (cookbook version) but it is really easy and sooooo…. good. It’s from a Brit cookbook:
Pulled and Devilled Turkey
This traditional English dish is the most delicious way to treat “leftover” Thanksgiving or Christmas turkey that I’ve ever tasted! And it’s so easy to prepare that it’s sure to become one of your favorites too, all year round. Serves 6
One pound of dark, or leg and thigh meat, from roast turkey One pound of cooked white, or breast meat, ditto
Remove the dark meat from the bone, dividing it into plump chunks, each worth a few good bites. Try to follow the natural divisions of the muscle, so that the chunks hold together. Pull the breast meat apart into longer somewhat thinner pieces, so that there’s a nice contrast with the shape of the dark pieces.
For the devil sauce (dark meat)
2 rounded tablespoons French mustard (e.g. Grey Poupon)
1/4 cup sweet chutney (or substitute Branston pickle)
2 tablespoons Worcestershire sauce
1/4 cup butter, melted
1/4 cup dried bread crumbs
Salt and Cayenne pepper to taste
Mix the ingredients for the devil sauce together in a medium-sized bowl, using the back of a spoon to mash any large pieces of fruit from the chutney. Add the dark meat and stir very gently so that the sauce coats every piece. if possible, do this a few hours ahead of cooking, so that the meat has time to absorb the flavors. Remove the Pieces of dark meat from the bowl and place them on a foil–lined broiler pan, close together a single layer. Spread the sauce evenly over the meat. Place the meat in a preheated broiler oven, so that the top of the meat is about 4″ from the heat. Broil for about 10 Minutes, so that the meat is heated through, and is brown and crusty on the outside. Remove from the broiler, but keep it warm while preparing the white meat.
For the pulled sauce (white meat)
1/2 cup butter
1 cup heavy cream
2 tablespoons freshly chopped parsley
Juice of one lemon
Salt and pepper to taste
Melt the butter gently in a large heavy-bottomed frying pan. Add the cream and boil for two or three minutes, stirring constantly until the Sauce thickens. Add the pieces of breast meat and stir until they are heated thoroughly. Stir in parsley. Season with lemon juice, salt and pepper.
Arrange the pulled and devilled turkey on a warmed serving dish, either side by side, or with the pulled white meat in the middle, surrounded by the devilled dark meat. Serve with warm crusty bread or wild rice, and green salad or coleslaw.

There is a tendency for we men, once we think we know something, to simply take over. I like to cook, but, over the years, I’ve discovered that there are a lot of things that I’ve been slow to learn that my mother never taught me (my mother had a theory that I was the least likely to get married, and therefore, needed to learn, at least the rudiments of cooking).
My mother never taught me to make a cheesecake, but, eventually, I learned, or so I thought. Eventually, I did my own recipes, and discovered that orange and chocolate went very well together. For years, I made a chocolate-orange cheesecake of my own devising, and, every year, the cake cracked in the middle, no matter what I tried. Easy to disguise, with grated nuts and chocolate, but, still, not perfect. Until, one recent year, I didn’t just beat the cream and the egg whites and fold them in. I whipped them, by hand, with a whisk until they were both, individually, very, very fluffy. Then I folded them in, and no cracks.
Only took me fifteen years to figure it out. :)
montag- well, all I can say is that your imperfect approach is much more endearing than, well, the other. And, I’m sure no matter the appearance, the taste was delic. And, orange-chocolate cheesecake does sound wonderful. I’m off to crash.

Hi Montag! I got the recipe from a ‘healthy’ cookbook therefore I was a bit concerned that, while good for the heart it might have let the tastebuds down. Not so! It uses a whole mango, hot mango chutney, lime juice, Dijon mustard and port and was so yummy that I’m looking forward to having the leftover for dinner.Valley Girl @ 93
